Mezze Project channel is the upcoming project of Istanbul Elsewhere through which we will present traditional mezze recipes. We will host guest chefs while exploring ancient mezzes. The Mezze Project would include young chefs as well people watching us from their homes. It will take you through the long history of particular mezes and present beautiful memories from meyhanes. We believe that the culinary culture enrinches our relations. As we gather around the biggest table of the world, we will trace how mezze reverberates across other culinary cultures. To this end, we will also hold workshops with English-speaking guest chefs from all around the world.

Vegan Çıltık Mezze: Story and Recipe w/ Alex Dawe
Today we are here with mezze lover Alexander Dawe. He made a vegan mezze çıltık.
Ingredients:
1 aubergine
8-10 cherry tomato
1 onion
A little of potato leeks (instead of garlic)
1 green pepper
A bunch of parsley
Olive oil
A pinch of salt
A pinch of pepper flakes
Cherry tomato is optional.

Are any of these goes well with this meze receipt? Any ideas? chardonnay, pinot noir, nebbiolo, syrah, cabernet sauvignon, zinfandel... Or should we stick with raki? 😊
Medium-body wine can be good, especially Pinot Noir or Sauvignon Blanc.
