Being a southern boy, I use bacon fat and lard for cooking. I've also used Schmaltz, which is fantastic to fry chicken in, it be very rich tasting. Tallow itself is very rich but you need to cut it considerably with other fats because it has a low melting temperature which means if you just use tallow you wouldn't want to drink anything very cold with what you're eating, I know this from experience. Tallow is the fat from around the kidneys of beef or mutton. That said I tell you lard is wonderful, swine have certain classifications as to whether they are a lard pig, or a pork producer, not being a hog farmer, I can't give much opinion on which is which. But certain breeds are for certain productions. All that said I will tell you that growing up a southern boy, my daddy took me out to his garage one time after my momma hollered about someone been using her Jergins lotion, and handed me a small jar of lard, told me not to say anything to my momma... "Praise the Lard." LOL

Bear thought he'd weigh in on this...Bear's grilled cheese would be cheap white bread, Velveeta, and buttered with RBF (rendered bacon fat). Toast in a hot cast iron skillet, put onto a plate then salt and pepper that. Serve with plain potato chips and hamburger dill pickles. Oh, and a glass bottle of coke, or a tall glass of sweet iced tea.

Try this recipe. Fry 6 strips of bacon. Remove bacon and dump a can of Luck's Great Northern Beans (or equivalent brand) into the hot bacon grease and stir. Crumble bacon and add it to the beans and enjoy. Serve with mashed 'taters and biscuits (or skillet cornbread). Don't knock it 'till you've tried it! "Luck's Beans" are a southern tradition just like Duke's mayo and banana sandwiches.
