Pork chops reverse seared like a steak? OH YES!
We took tomahawk pork chops, smoked them on the Weber Searwood XL 600 until they were good and smoky, and then seared them at 600 degrees on the Searwood's sear grate. They came out super juicy, salty, tender, and excellent. It wasn't easy though, because the Searwood had a hiccup in the middle of the smoke. Thankfully we were able to salvage the cook and the end result, while it took longer than expected, was fantastic.

Wow that’s a strange statement from the rep. I use it all the time. 3, 4, 5 times a week. No issues whatsoever. Just empty the ash/grease catch and the flame diffuser every 3 cooks or so. Eventually the glow plug will go bad and the more it’s used the faster that will happen, but that’s $25 and 5 minutes to replace yourself.
