1850's Curry Paste (used in Titanic's Curried Chicken recipe)
Просмотров 1002 года назад
As promised, here's the recipe for Sir James Ranald Martin's Curry Paste, dating from his time in India during the 1840's and 50's. It's the recipe I used in my Titanic Curried Chicken and Rice video, because I think it's a good stand-in for curry pastes/spice blends that might have been used in Titanic's galley! I liked this 'historic' approach by re-cooking an original recipe from 1816! Maybe not doing it when in the middle of a diet.. but great tip to add egg-yolk for a better texture of the chocolate😊

    We do Gulyás from time to time - but not that often with Sauerkraut. Got inspired to try this variant. I definitely appreciated the background about the RMS Carpathia.👍

    I think I will give this dish a try, The sauerkraut got my attention, I am not a pork fan so I may just substitute this out but after I try making a small batch using the Porc Shoulder. Thanks for sharing this recipe :) I am also a steam ship fan especially those of the late 1800-1950's

      Some recipes, both modern and turn-of-the century used both pork and beef, so if you prefer beef, it wouldn’t be completely taboo ;-)

    A tablespoon of soy sauce mixed with a half-tablespoon of marmite can provide a vegan umami bomb. You can use the rest of the marmite as toast topping for people you wish to never visit you again.

    Do you think there's a difference between crushing or mincing the garlic?

    • @gen-eat-alogy
      @gen-eat-alogy 2 года назад

      I guess maybe crushing releases more of the garlic juices? It could make for an interesting experiment, doing like, splitting the batch in half, doing one half minced, one half crushed?
