What's that red thin filling you use? It looks like red bell pepper, but I've never seen anyone using that before.
It’s shredded surimi sticks with mayo, we do it this way because it’s easier to put in bags and then in rolls

the way you make nigiri is soo satisfying, chef. You can tell its just a 1-2-3 thing for you but I know it took a lot of hard work to become that good. Love the vids!!
Calrose rice ratio ( in rice cooker) 3 cups ( cup 250 g) rice wash 3 times , add 3 cups water .. 250 ml chari ..?
what knife are you using? is it sujihiki or yanagiba ? 24/27 cm stainless?
It’s a 27cm carbon steel yanagi fron yoshihiro cutlery. Yanagis are much easier to sharpen in my opinion as you already have a set angle. Formula cars in the knife world
Hello my friend, I have a question. Can you explain how you cook the rice? Because, most of the time when I cook rice for sushi, It seems.that I do that with too much water and the rice is too wet. I can see in your case, the texture is perfect.

I work at a sushi place myself. I found out that for cutting in 4 pieces its easier to cut the maki in half then the two pieces in half again haha great vids !

I know this may be impossible due to various reasons. either that being disk storage, or environment. But I'd like to see a whole day POV Video. Uncut and unedited. Well you can remove any sound and talk we aren't supposed to hear that's understandable. But Id like to see how an actual day is. We see only either rush hours, or interesting orders, but almost never the whole process. that being prep work opening, rush hour and downtime. I completely understand if this is impossible for you. I'm asking for too much. and a potentially 8 hour video would be quite draining for many to watch. But if you can, and are not against the idea. Have it in the back of your mind. and maybe do it sometime Other than that I love your videos man. It's given me inspiration to try and get better at sushi making myself. And cooking in general. Keep up the good work!

What is the machine can cut the cucumber like a paper?
Human hand 😉 You don’t have machines for cucumbers specifically because the core of the cucumbers is very soft so it doesn’t have what to grab on.

Hello, there’s been massive heat waves here and it just makes it impossible to film anything of value right now. Plus im training a lot of new people so i don’t have the time. Coming back soon i hope 🤞
