Nice one pot meal. Courgette/ zucchini makes a change from cauliflower rice..on keto. Think I would add a little ( frozen) mixed peppers for a bit of colour and taste..thank you for your recipe.

Advice.. make it peanut butter double chocolate chip cookies by adding a heaping tablespoon of bitter good quality cocoa powder. I do it that way usually and lately been adding in orange zest.. 🤪 crazily GOOD. Festive. Tip: 4 Tablespoons peanut butter should be enough in this recipe. Baking soda alone no need for neither baking powder and cornstarch. Try it. PLUS chill before forming till your oven got ready for easier forming no need to oil your hands. 😊

Love your video and the education it brings, If you don’t mind me suggesting I would wait until the vegetables cool off before you put it in a plastic container to blend. The heat will weaken the plastic and leach into the food.
