Love these videos, that's a craftsman at work! Very few appreciate how difficult it is to get that finish and too many think they could 'do that'! Personally I would weld before I tuck and use the spatula at the back to protect the capping and then tuck, makes life a little easier if you have 50/60 inside/outside corners in a commercial kitchen. Am a student of the game so would love to know what ideas/hacks people have?
Pretty sure this is the guy that put me through my 2 day Altro course all the way back in 2003!! Still use the tips and tricks he taught me to this day
