Gozney Arc XL & Booster Unboxing, Assembly and First Fire
In this video we unbox the newest oven from Gozney, the Arc XL in Off Black along with the booster. This oven was packaged great, and very easy to assemble. The Booster was also packaged very well and did require some assembly but is quite simple and only took about 10 minutes. Once we put the Arc on the booster we connected it to a propane tank and we were ready to fire it up! It started right up without any issues. We cured the stone by running it on low for a min of 30 mins prior to increasing the temperature. The front digital display looks great and is easy to read.
All in all I think the Arc XL is going to be a great oven and I look forward to getting a few cooks in on it, so follow ...

I would use cracked pepper use a jerky mix and let set 24 hrs for flavour to penetrate the meat and use real garlic

Reduce harmful bacteria growth, shelf stability, texture, color and flavor.

About how many pounds did you start with?
I believe this was around 3.5 lbs
How would this work with the beef being substituted by/with venison??
Ya for sure, venison is lean so you may want to pair it with fattier pork. 🍻
Hi. Have you ever had any concerns with heat behind the units? Do the surfaces behind get hot?
I find it depends on the unit and where the heat exhausts out. Pizza ovens are fine, pellet grills exhaust out the back so when I use them I pull them away from the wall a bit especially if I'm running them at a higher temp. Easy way to tell is put your hand on the surfaces around the grill while it's running, warm is ok but hot is not. 🍻

Yes, the grill is on and it's set to 165f. The lower a pellet grill is set the more smoke it will give off.
That jerky gun dont work well when pushing tree bark or bugs through them

After you get your meat mixed up take a small bit ,,fry it to see if its at your taste, that way you can see what you want to add

I just brought a "Really" cheap dehydrator, only $39 AUD (26.56 USD), seems decent enough to get into dehydrating before I get something better.

How do you keep rodents and insects out of your shack?
I try to keep everything as clean as possible, and I use peppermint oil occasionally around the shack for rodents. Insects and spiders do make their way inside and that's just a matter of brushing away the webs etc as needed. 🍻

I don't but I would love to add a nice big commercial style sink for cleaning the large racks, pans and grates in. 🍻

My first pellet grill was used, barely worked and cost 150.... It still got the job done though, it doesn't have to be fancy or expensive. I've been slowly upgrading my grills over the last 10 years, trust me I get it. Appreciate your input 🍻

what if your pellet grill only gets down to 180 as lowest? could you cold smoke them for a bit then turn the pellet smoker on?
180 should be ok, if you cold smoke them first then keep in mind you should use curing salt to keep any harmful bacteria from growing. 🍻

If you add curing salt they could be. 🍻
You can vacuum seal them and they will last longer but they don't have preservatives that'll keep them good indefinitely.
Going to try this very soon. Have you tried the fireshire version of the W sauce on this before? Just curious. My wife loves spicy and so do I. I marinate my steaks and chicken thighs in W sauce. Good stuff! Great video too!

Something that came to mind while watching and sure, ten months later I find this and I'm thinking to myself that I'm ten months late to this party and the only person I could be disappointed with is myself. Love it. Will do it. Granted, I don't have a Traeger. Just an old traditional wood smoker. My personal preference especially since I'll be using Pecan.

Hi, what kind of pellets did you use? I tried it with apple wood and the smoke flavor is to overpowering
I like to use Hickory with my jerky but it is stronger than apple, apple is on the milder side as far as wood goes. You may want to try less time in the smoker perhaps if you find the smoke too strong

The paper towel trick I really like. I made the mistake on my last batch of vacuum sealing them when they were still warm instead of letting them cool first. The vacuum pulled some of the oil out so in the package it had a white fat coating which was still delicious but not as appealing visually. I also like the ground beef/pork mixture. Will have to try that next time.

I commented on another video of you, about the 3 x reinforcements bars from the back. I have seen on many others that from the first use of the griddle you can see the weldings on top of the plate, sticking out .... and it will not be a flat top anymore, creating small waves. Can you please do a review on that ? or at least reply ?
Ya this is common on griddles, it's just the way the metal expands when it gets hot. I've seen this on nearly every griddle I've used. In reality it doesn't affect it much, I haven't had problems with it.
I can see on the plate, the moldings from the 3 insertions in the back of the plate. That's sad. It will affect the plate in time and it will create curvatures on each of them !? Do you know what I mean ? Can you see those ? 2 for each one of them. like white molding lines. That's not okay for an expensive griddle. Thanks for the video

Do you take the Flattop out of the shack when using it? The heat they put off has me worried about being so close to the sides of the shack.
No I don't take it out but I do pull it away from the wall a bit. Easy way to tell is to feel the wall around it when it's on and see how hot it is, then you know how far away you need it. 🍻
The really annoying thing about the booster is that they created one model for both the Arc and the Arc XL - which makes no sense for anyone buying the smaller model. The main reason why you'd buy the more compact oven is that you have space constraints. So why on earth would you buy a stand the base of which is made for the larger oven and tapers out toward the huge base which is even wider than the XL oven itself? Obviously, while it looks nice, the tapered design is also nonsense from a practical standpoint.

I get an OUTSTANDING wet bacon cure from the Con Yeager Spice Company in Zelienople, PA!! They don't show it on their web site, so you call them and ask for "The 10 Gallon Bacon Cure". It is the BEST TASTING bacon, EVER!!

I do these in combination with a thinly iced London broil, and they take about the same time, however I marinate that sliced meat overnight in a Worchestershire/Soy plus seasoning blend.
