Low-gluten flour has the lowest gluten strength, with a protein content of less than 8% which makes the cake softer, you could try all-purpose flour but need to reduce the amount by at least 5-10%

When I whip the cream, the small bowl store the cream while the large bowl is kept cold with ice packs to keep the cream more stable.😄

你可以这么理解,一般打淡奶油都是放8%~12%糖,也就是250的淡奶油需要放20~30的糖,而影片中的250淡奶油仅仅放了20g的炼乳 而炼乳的含糖量是每100g有54g 换算来看也仅仅是10g左右的糖罢了
