Omg! I was searching for Vietnam Coast’s name sake dish the “Vietnam coast” to try and replicate it because my husband and I are from Houston but now we live in Colorado and I cannot find that dish or anything like it anywhere! That was our favorite Vietnamese restaurant and they also have the best crispy Vietnamese eggrolls and fish sauce. If you ever go back there I wish you would do a video on their name sake dish. We usually got it with chicken and shrimp and my husband always asked for extra lemon sauce which is some sauce that comes at the end of the little boat dish that taste like a salty lemon. I miss it so much!!! we’ve tried many places where we live now and nothing compares. 😭
Good video. I grew up with people from the Philippines and the mom, Mimi, was a fantastic cook--and we always ate lots of rice. I really need to learn to cook like she did. But here is my request: Can you do a video about making fried chicken just like Jollibee? You know something like "Here is the secret to spices that Jollibee uses." I get it when I'm in Chicago or Maui but no such luck at home.
Nice video! Gonna make these this weekend following along. I ate something like this just about every day during my trip to Mindanao in 2010 but I haven't been able to recreate the same flavor yet. Maybe the type of coals are important?

I never know what wood to use. What made you go with Hickory?
Roy Peckham it was what I had most of. For beef I usually stick with pecan, hickory, or oak. Sometimes mesquite although that is quite strong. I would cook with those and see what flavor you like. Always fun to experiment

I look for good marbling and if it’s a prime cut. However on this one because it was holiday season and it was on sale. I went for price
