one of moriya shrine's job is also making sure a good harvest can happen. so yeah, they have the monopoly of faith for that.... a MOUNTAIN of faith
I'm pretty sure the reason why is cause ZUN probably made them as joke/filler characters. Or at least, something to fill in MoF's theme of gods. That being said, us Aki enjoyers are pretty dedicated. Just look at the influence of Philiponbread's OCTOBER FIRST videos! And as the overall fandom grows, the two autumn gods will get more fans. As for media, there is a obscure fangame with the Aki sisters called "Tou no Kuni no Shuukaku Sai". It has pretty interesting game mechanics, but unfortunately does not have an english patch yet.

I love the Aki sisters. They're not in my personal top 5, but they are my favorite characters introduced in MoF. I'd love to see more stuff involving them whether it be fanon or canon.
my favorite seasons are chronological from autumn. winter is my second favorite. i would like to see more aki sisters-related content.
