Hello, I’m Chelsea. I just completed my PhD in Nutrition. My doctoral research focused on legumes (pulses, in particular) and outreach. Essentially, in my research and other work, I take a translational research approach to help people eat more beans so that they can reap all the amazing benefits beans can offer for human and environmental health. I also love to cook - and eat! - and want to share some of my favorite recipes here, on A Legume a Day: alegumeaday.com/

I love the additive approach Cindy takes: adding beans to your diet doesn't necessarily mean you have to take anything away! (It might be a while till I try kidney beans in my apple crisp, though 😄)

Lovely interview! 5:00 they were a lot better than trying to milk cows That is such a nice way of saying why beans are just about the ideal crop and food. I'm sure the cows love it too! White kidney beans in tomato sauce is what my grandmother used to make in Flanders when I was a child. I have loved them every since. Beans are the thing!

@@ivacheung792 aren't they pretty? 😍 I like to use them in bean salads because they are so gorgeous, I like to be able to see them (as opposed to not really getting to enjoy their lovely pattern in a dish covered with a heavier sauce). One of my friends likes to make "bean ceviche" with them.
I just cant get over the taste, how to make beans taste better?
@@LinhBell-mb3gn how do you normally eat them (cooked from dry, canned, already seasoned, salted, etc.) and what types of beans?
@@alegumeaday so far I have tried black and red beans, both canned and cooked from dry.
@@LinhBell-mb3gn okay, a few ideas: 1.) Both of those beans can have a stronger flavor than a white bean like a great northern or cannellini bean. I would encourage you to try a few different types of beans. 😊 2.) If cooking from dry, I highly recommend soaking and cooking in salted water, assuming no sodium restrictions. 3.) Canned beans aren't all the same - some brands are much higher quality than others. I've had some pretty less than appealing grocery store brands, and when you open them side by side with other name brands, the difference really can be dramatic in terms of texture, flavor, etc. and 4.) Try beans in different dishes. For example, you can blend them into sauces and smoothies and other dishes. That way, if texture is part of the thing you don't enjoy, you aren't noticing the texture. I hope that helps some! 😊

I love seeing all those beans, they remind me of the varieties found in the small agricultural markets when I visit southern Mexico. As a beaner🇲🇽 I'm delighted with this channel!
Lovely. Beans don't get nearly the publicity they deserve, despite of them being the closest thing we have to a holy grail. They have just about all the good qualities we like: diverse, colourful, tasty, easy to prepare, healthful, tremendous shelf life, easy to store, compact, cheap, what is not to love about them?
They really are an INCREDIBLE food!! Like you said, the list of positive attributes just goes on and on! 😀
@@alegumeaday Indeed! I have been eating beans as my main staple for the past 11 months, nearly a year. Despite popular claims/predictions, I am thriving, not falling apart, and my life has become so much easier and serene. I am currently having soybeans + 9 beans/lentils and 4 grains in daily rotation, which means that I eat a different combination every day and get the same combination back only after 36 days, not even once a month. How's that for variety? And that's not even counting the beans (especially jumbo lima) I use as finger foods/snacks. There simply is no end to what we can do with them and they are so much better for the environment and non-human animals.

@@alegumeaday Actually, I missed one. I have 14 types: soybeans red kidney beans white kidney beans green mung beans jumbo lima beans chickpeas black chickpeas black turtle beans black matpe beans red lentils green lentils brown lentils crimson lentils dried whole green peas There are a few more I could buy, but I only have so much space to put them in ^_^ They are all delicious as far as I am concerned.

I wholeheartedly agree with that. Beans, lentils and peas are by far **the** major part of my diet. They are convenient and delicious, have a very long shelf life, are eminently affordable, are applauded by the poor animals that people needlessly slaughter and are great for the environment. What is not to love about them?
@@BartBVanBockstaele what's not to love indeed! Such an impressive list of amazing benefits!! What are some of your favorite ways to eat them? We love beans, lentils, and peas too. Honestly often just end up eating them plain - they are so tasty as is!
@@alegumeaday Same here. I currently eat them mostly ground, mixed with water and cooked in the microwave because it is tasty and takes mere seconds of work (I ate soybean+peas+barley today), but I also love them plain (pressure cooked), cooked in the rice cooker (especially the very biggest ones (such as jumbo lima or large kidneys) as they are a great finger food/snack with half the calories of nuts and just as tasty (same with microwave-roasted soybeans, even if I eat those with a spoon ^_^). There is just no end to the possibilities.
@@BartBVanBockstaele this all sounds delicious!! Good point about the nutrition, too. I love roasted soybeans as well!
@@alegumeaday The only thing about microwaved roasted soybeans is that they have to be soaked, so it is a delayed gratification food. OTOH, they can also be ground after roasting and turned into kinako. Either way, they are delicious! My only problem with beans, any and all beans, is that I have to limit quantities because they are so easy to overeat and then my scale starts crying. But then, I can think of worse problems in life than that!

If not using it as an omelet, why not just scramble it while cooking like one would with chicken eggs?
@@thecleanveganista you can try that! I find it cooks up to be more egg-like if you do it this way. If constantly scrambling, it comes out more like a paste.

Sprouted Lentil Sesame Milk: Blend, then strain - 1/2 c lentil sprouts, 1/2 c sesame seeds, 3 c water. Add sweetener: dates, agave, or sugar.

I have a pot simmering now. 6/16/24 This time of the once abundant? now rare? NAVY BEAN. These have been out of stock for months, now also out of stock today the "other white bean" the Great Northern at the Walmart where I get most of my groceries at a bit, to a bit more, of a lower price. How soon will the "green bean", made out of bugs and chemicals, be "available"? God Forbid.

Great interview. Sadly, there is little expansion in my bachelor household, as I already eat an average of 200 g dried pulses a day. I have 14 different ones in my pantry. They last virtually forever (although not in my home, I eat too many). What's not to love? I am surprised by the suggestion that the protein in pulses is incomplete. That is wrong. ALL plants contain ALL essential amino acids, and that includes pulses. For the rest, pulses helped me lose well over 60 kg of body weight and keep it off. That should be an incentive for at least some people. And I do like Tim, I eat pulses for breakfast too.
Thank you for your comment! Glad you also enjoy lots of pulses, including for breakfast. Yes, like my video I linked to that explains the protein in pulses, pulses do contain all 20 amino acids. There is a lot of misunderstanding about plant proteins. Glad you also recognize them for their protein and the other health benefits they have to offer! How do you like to enjoy pulses for breakfast?
@@alegumeaday RUclips does not like links so I cannot show it, but my main way of eating them is in the form of a small muffin or a crumpet-style cake. That is how I start my day. It takes seconds (not including heating ^_^) to prepare and is very versatile. Maybe I should make a video of what I do. I did that once years ago for another way of preparing them that I currently no longer use. It is still on RUclips, but it was a little more elaborate. I think that saving time is important for everybody but far more so for people who live alone because of the time things take per person.
@@BartBVanBockstaele I would love to see how you do this - it sounds delicious, healthy, and quick! I agree it is really nice to have recipes that do not take too long to prepare, because it makes it easier to share them with others.
@@alegumeaday My much older version can be found on my RUclips channel, It was the very reason I bought my blender, but I stopped doing it. It wasn't a lot of work, but I hate the clean-up. I hadn't used it in a long time but since I thought of this way of preparing beans, I am using it every few days, just to grind the beans. I have a Vitamix but it is not needed and a reasonable argument could be made against it and in favour of a less powerful blender. I just like the larger quantities it makes. I tried a Nutribullet and a Magic bullet and both work. The structure is a bit less even but that can be achieved in the Vitamix as well, simply by grinding for a shorter time. I tried posting a link to a picture on my Twitter channel but RUclips does not accept it. Funny is that when I tried a Google search, the first thing that came up was a PubMed article about black beans that reduce inflammation and improve insulin sensitivity ^_^ Anyway, I posted a few pictures on Twitter recently (including today). My handle is @Thamno. Too bad I cannot link to a picture directly. The first three posts you will see are soybeans+barley (today), soybeans+black beans (yesterday) and soybeans+corn (the day before). There a bunch more but they are a bit deeper down. Since I live alone, I love it. Beans have a long shelf life, so that avoids wasting heaps of time shopping. I just by larger quantities. I have enough in stock for at least six months and that is only if I were not to eat anything else. Obviously, I don't do that though, but in case of another pandemic or something similar, it seems I would be all set.
I love this recipe, I make it often, sometimes I add some Japanese sweet potatoes, and I’ve found I prefer garbanzo beans to the black beans

Did you use stakes or let them grow as a bush?
I let them grow as a bush - they were somewhat supported by neighboring more upright bean varieties, which helped. I have seen people grow them using stakes too, though.

I use an Instant Pot as well. I love the broth, especially in the case of soybeans, but I ended up titrating the amount of water so that there would be no water left after cooking, concentrating the taste in the beans themselves. However, I now almost never use the Instant Pot anymore because it is too big and awkward for comfort in my tiny bachelor kitchen I cook small beans and lentils in the rice cooker and grind large beans and soybeans in a blender after which I cook them in the microwave or put them in soup. Works perfectly, no work worth mentioning and very tasty. I cannot imagine having a beanless day. I just have to be careful not to overeat them because of their hyperpalatability and high energy content, but that is the only downside. Storing is a snap, especially since they are so compact and light and I always have a several months' worth of stock. People who don't eat beans are really missing out.

I find that pinto beans which have darkened with age also lose their flavor. Are slow darkening pinto beans also slower to lose their flavor with age?
That is a great question! I find them to keep great flavor, but I don't know if any studies have been done on that.
I eat at least a pound of dry beans a week. Alternating pintos and black beans cooked in the instant pot. Super good.

Thanks again! For the question at the end...bean desserts would make an interesting topic. I once painstakingly grew azuki beans when living in Maui and was vexed by the whitefly population decimating my plants. Eventually, I had several handfuls and made enough paste to make filling for Japanese sesame buns. That was a sweet, lingering taste of hard-won victory...and nice red beans.
That is a great idea! So sorry to hear about the pest problem! I imagine it was a very sweet taste of victory, indeed. I lived in South Korea for about 4 years and traveled several countries in Asia while living there, so bean desserts are close to my heart. I'll work on something. 😊
25:19 "Linkage drag - with something good always comes something bad as well." I would think the major challenge, a complex challenge ongoing, is to breed beans that are not injurious to human health in the process of breeding in resistance to insects and fungus and all such that wants to "eat" beans. I do hope human health is valued as well as "economic interest's" desire and demand for increased production. Our world needs those who fight the good fight.
Thanks for your comment! Yes, breeders also consider nutrition. For example, the work on looking at mineral bioavailability. Yield and market opportunities for farmers are important, and absolutely nutrition as well. My PhD is in nutrition, so I agree, as do my colleagues in many fields. 😊
