My understanding was that wrapping your serving the opposite direction of the string twist actually causes the serving to tighten naturally rather than loosen. Not sure which is correct.

Where are you starting? How do you start the serving?
Is it me, I have watched several times and it looks like you are winding your serving the opposite direction that your string is twisted which you do not recommend. I know this is a few years old.. Great instructional video and I am going to use it just confused on the winding direction.

that looks like it'd be great on a kids bow, where they're constantly growing. With a little effort you should be able to slide it up a bit when needed. I would take a Sharpie and mark the original spot on the string so you could tell if it unintentionally moved.

Too bad with a buss cable driven rest there's no way to set how long the rest supports the arrow, unlike a limb driven rest.

Some brands of arrow rests favor longer % of arrow support. With these rests is there an issue with the support falling away after an inch or so of arrow travel?

U doing this wrong! Put the string between the cable and draw the bow ! The string will pull the amount it needs on draw, Now! U can serve it in after u let down and burn the end to a mushroom
That works too. Like everything else in this industry there's a lot of ways to accomplish the same thing.

...You know, you have a different approach to a center serving here that I would like to use, primarily because I use a .018 size serving thread for proper nock fit. Unfortunately, your camera position does not allow enough detail to use your method. Sounds good, just can't see it....Although, I did figure it out. What a great way to wrap a center serving...
how do you know where to place your serving ??
4 inches of Center Serving is plenty enough. String makers make them longer for margin of error and looks. Used to be the center serving was to protect the string when it hit your armguard and finger tab. Rarely is that a problem anymore. A good starting point is to center the serving so it's located about 3/4" above the center of the string for most bows, because the arrow/berger button is typically about 3/4" above the center of the bow/string (most bows, some do shoot the arrow at true vertical center).

Does your tail rotate / spiral around the string as you serve? Or does it stay straight? Also, i would imagine wherever the tail lays has an impact on nock tension... Is it preferable on the side, front or back?
Typically just lay the tail straight (if not cut). The tail comes more in to play when considering the overall diameter of the string/serving combo. If you build a string with a high bundle count, plus a high diameter serving then opt to wrap over the length of the tail, you may have an over sized finished product resulting in poor nock fit. Consider all the variables in the equation when building your string and serving it.
