Smoke n Fire BBQ
США
Добавлен 28 ноя 2022
I am a BBQ hobbyist from North Carolina. I have had all types of grills - charcoal, propane, barrel smokers and pellet smokers. I am always tinkering, learning something new and trying to improve my craft.
I am a Carolina Yankee and I appreciate regional BBQ styles but my favorite dish of all is a smoked beef plate rib, courtesy of Texas.

Thanks alot!
How did you remove old one? New one has a bolt/nut. Old one doesn’t on mine
Good smoke. Good flavor. Great price. What I didn't like? They swelled up like crazy in record time for me and jammed the auger numerous times. I switched to Royal Oak 100% charcoal pellets.
What is the taste of smoke from each of these methods?
In all my years of dabbling with different varieties of chips and pellets, I honestly don't taste much of a difference in any of them. I wish I did! There seems to be a slightly different smell between mesquite, hickory and cherry although it does not translate to a different taste, at least to my untrained palette. If you want smoke flavor, you need cook a cold piece of meat low and slow. High temperatures and fast cooking times seem to knock out any of the smoke flavor even though you will smell the wood when cooking!
I've tried these as well. They worked fine and are good in a pinch. The flavor was nice, but I was looking for something more flavorful. After trying many of the top brands, I stumbled across the B & B Championship Blend which can be found at Academy. B & B are now my favorite and can be had at $20 for a 40 pound bag. The flavor is excellent and I don't need to use a smoke tube as an enhancer. Their blend is an Oak, Pecan, and Cherry wood mix. I know I sound like a commercial, but I really like these pellets.
Thanks for the recommendation. I will give them a shot too!
Smoke n Fire BBQ, Your videos always make me happy, so I subscribed!
How u doing?-you made amazing video,Smoke! ))
The one I have (and it looks to be the same), is adjustable. You simply use a flat-headed screwdriver, and slowly turn the end-point of the probe. I'm wondering if all of these worked fine, but just needed to be adjusted before installing.
The current one I have is acting up now and is running about 100 degrees too hot. Perhaps something gets loose over time. Customer service did not mention anything about adjustments but it is possible.
This guy sounds like he can sleep with a supermodel and find a bunch of stuff wrong with the experience. What a whiner. I feel sorry for his husband.
U complain about some ridiculous stuff in this video.😂 The pellets feed from the center. Yeah, no s**t! Is this your first smoker?
Yes, it is my first pellet smoker. Feeding from the center is fine. The problem is the window on the hopper gives the impression that the level is higher than it really is. And when the hopper runs low, the app does not notify you until it is time to shut it down.
Im a beginner for smoke cooking. I was looking this camp chef 24 and pitboss lexington. What do you recommend? Cheerz
I can only speak for the Camp Chef. I have had some quality issues and had to supplement a smoker tube to get the taste where I wanted but it is has been fine!
I don't have any problem with smoke flavor and I have the same model. However I have never used the smoke "10" setting as temps fluctuate too much from what I have read. For example, when I cook lets say a ribyeye, I set my temp for 220 with a smoke level of "5" - when I reach about 110 inside the ribeye I crank it up to 400 and open the fire pit by pulling the handle on the left for direct grilling. I let it rip until the ribeye reaches about 135, flipping them once just to get some grill marks. I keep aluminum foil on the drip pan and i cut out all the slits with a butter knife and have had no high temp fires flare up. I actually went all summer only cleaning out the ash pot!!!! For pellets I used Camp Chef Applewood and it the flavor I use the most with any other pellet brand. I also have the side sear box...but never bought any propane this year...otherwise I would have reversed seared my steaks on that for sure. Overall, I am very pleased with flavor...but everyone has differenet pallets also. Cheers.
P.S. - your link to the smoker tube goes to a camp chef cover instead.
Interesting. I have still not used the "high temperature" features. I make my steaks on a Napoleon propane gas grill and use wood chips if I want to get some smoke flavor. I have had decent luck with reverse sear and two zone cooking. I am back to the aluminum foil over the drip pan since cleaning the smoker sucks. I tried to be more diligent about making sure all areas are covered to prevent grease leakage.
@@daddylogan Thanks. Fixed!
Thankful you came to the correct bottom line!!
Update: I am now on my THIRD gauge. No idea why these are made so poorly. They keep replacing them though.
Liked the break down on the cookers.
I have a woodwind 24 and I have added a gasket around the lid and it works well. Also I agree with the lack of smoke flavor. What chips do you use with your smoke tub?
I have tried a bunch of brands and flavors with no real difference. At this point, I buy whatever I can find on sale with free shipping. I try to avoid Traeger since they supposedly flavor their pellets with oils. Hint: Check out Home Depot for some good deals. They usually have Bear Mountain for a pretty good price. Cheaper than Amazon. For more smoke, pick up one of those smoker tubes mentioned in the video description. It makes all the difference. Good luck!
Do wood chips work well in the tube?
I have a hard time keeping wood chips lit in the tube. They stay lit in smoker box or the foil pouches but not nearly as long.
You pronounced the name for Grady’s wrong and we’re way off the mark with your review.
How would you pronounce Grady's? Like I said the review was done during the height of Covid when everyone was barely hanging on. They deserve another shot for sure.
trying to figure out how to make a rotisserie work on a flat top gas grill like yours and shut the lid, I have a charbroil and when the rotisserie is on the grill the lid stays up wouldn't all the smoke just pour out the gap? Thank you if you have any suggestions on stopping that
I have never set up a rotisserie but I have seen some where the lid can be closed during operation. If yours must remain open, then I imagine you would lose a lot of smoke and heat. You can try adding a smoker box or tube below the rotisserie bar but most of the smoke will likely escape.
Thanks I was looking for something like this.,
Good video thanks.
How long did it take to get replacement gauge (any issues w/ customer support) and did you have to pay shipping?
Support was very friendly and shipping was free. It did take a couple of months for the gauge to come back into stock though. Typical these days. The second replacement shipped in a couple of days - I guess they had some in stock.

Use some of that hair you have laying on your shoulder and that should get you some more smoke😂 cupcake
That's hilarious
Very thorough.
I leave pellets in my hopper year round and I live in the PNW and never had moisture issues with pellets.
In response to the pellet feeding issue. My Traeger's do the same thing. I've gone to switch pellets and had older pellets in the bottom of the hopper which doesn't concern me since I don't store my grills outside. One thing that might help is to remove the guard on top of your hopper that way the pellets are easier to push down by hand. As to more smoke flavor I use lumberjack brand pellets. I find this brand gives the best smoke flavor. I couldn't tell from the pictures in the video if you had tried that brand or not. I hope these tips help. Happy Smoking!!!!!!
A couple of people have suggested removing the guardrail on top of the pellet hopper to make it easier to stir the pellets so I will definitely do that. I have not tried Lumberjack yet I am not been able to find them for a good price. Right now, I try to find whatever's on sale since I really don't notice much of a difference. Home Depot and Amazon usually have something for about 10 to $12 shipped.
Yes....I never even put that guard on so I can stir the pellets easier. I have no kids to stick their arms in there so I am good with it. ;-)
Those smoke tubes turn anything into a smoker. Love them.
Remove that dumb grate on top and stir the pellets every once in a while. It’s known good practice. I took the grate off my Traeger for that reason and my Pitts and Spitts doesn’t have one.
All 4 pellet grills I’ve used I t he last few years feed unevenly. They put those grates there probably for liability so that some moron doesn’t get their finger chopped off by the auger.
Thanks for the info
Quite welcome. Are you gonna get one?
