They see a domestic cat scaring away a baby or inexperienced coyote they think they can go against anything when i see coyotes taking cats around the same size
Usually two cats can defend against a coyote. That one has a clear size advantage and could probably take a third

I killed two coyotes in my sisters neighborhood that killed her cat that I raised. One was a pup.

I don't blame the coyote when he eats a cat. You can't blame a coyote for being a coyote. I blame the idiotic, inconsiderate owner who lets the cat roam free. Those cats being dead means all the birds and wildlife they would have killed get a chance to live.

Cats as all pets are considered by law as property and any and all damages it creates is the responsibility of the owner. Cats cause unbelivable amount of damage to birds and other natural wildlife. Many cat owners think it's a joke and refuse to leash and/or keep cats indoor. I say fine the owners and/or let the Coyotes enjoy a puddytat lunch!
