Vegan Cooking With Kelly

Simple vegan cooking and recipes from Kelly in her tiny home kitchen. Kelly lives full time in a 1947 retired Greyhound Bus that's been converted into an RV. She cooks all her delicious meals in a tiny kitchen with only 4 foot counter space. All of her recipes are very flavorful but yet simple to make. She uses lots of substitutions to create traditional everyday meals into plant based vegan dishes.
Vegan Omelet recipe (mung bean)
Vegan omelet recipe
Ingredients
1 cup mung beans (soaked overnight in 3 cups water)
1 cup unsweetened non dairy milk (may need additional if mixture is too thick)
1 tsp oil (I used avocado oil)
3/4 tsp himalayan black salt
1/2 tsp sea salt
1/4 tsp garlic powder
1/4 tsp onion powder
1/4 tsp turmeric
1/4 tsp black pepper
vegan butter
desired vegetables
Directions
Place drained mung beans and non dairy milk in blender and blend for 1 minute. Next add rest of ingredients and blend for another minute to fully combine. If mixture is too thick, add additional non dairy milk and blend.
Warm small pan and saute up desired veggies for your omelet. Once cooked, pour a thin layer of mixture over and cover. Let co...

Thank you. Just ditch the Kala Namak. It is loaded with toxic Fluoride! Very bad for your health. Unlearn the taste of and for eggs. There are other wonderful flavors you could try.
What happened to the vegan Channel
Much easier to use Just Egg also made from Mung beans. Pretty sure you'll be much happier with the results.
This is healthier though no weird additives

It's EASIER to do many things in life. This is about BETTER. Better is when you are empowered to build your own, to be self-sufficient, which is never easy, but yet much more fulfilling! 😄
The old saying goes "to each his own" might apply here. Just Egg is a wonderful new development that provides alternatives to using chicken eggs in our diets. It provides a sustainable plant based food that is cholesterol free and provides about the same protein as eggs. While it is not an egg it is about as close as you can get with out coming from a chicken.. For a wide range of people who can't eat or don't want to eat eggs it's a viable alternative. It makes great omelets and scrambles and many other amazing recipes. So it maybe worth giving it a try, if for nothing more than supporting a sustainable and healthy food source. The more you know about the actual cost to the planet of farming chicken eggs the more inclined you might be to trying this alternative.. Just keepin it real

Awesome 👍🏾 India has sooo many gifts to the world 💁🏻♀️ Also try with "split chickpea lentil" not to be confused with chickpea bean. U can also get it in flour form - called Gram flour or "bésan flour" in south Asian languages. "Channa dal" would be the indian word for "split chickpea lentil" This lentil has more of a nuttier flavor and when u buy it in flour form, is milled more finer than chickpea bean flour. You can also get "Very fine" gram flour. Good luck. 👍🏾

just fyi, many of us find that when cooked the black salt taste kind of disappears. So it's recommended to sprinkle on the finished product to get the full eggy/sulphur taste, and you can often use less too!

Looks yummy,although I would start with the potatoes onions and garlic the olive oil then add the softer veggie then the better than bullion that way the bullion Brown's the veggie and the veggie have a much bolder flavor, then the veggie stock this way the bullion won't wash off the veggies and when you bite in to them it a bomb of flavor in your mouth, and if you add the the dumplings so that they don't completely submerge in the liquid they will more than dubble in size then put the whole put in the oven until the dumplings brown on top and served with vegan butter on top it just takes to another level, I've been vegan sence i was 15 in 1975 and a vegan chef sence 1987. I live in Hawaii and all of my kids and grandkids are vegan as well, I love to watch videos like yours to see the way people are cooking today. I had some delicious vegan "chicken" skewers on a trip. The chef said they were made with mushroom stems. He said it was a very popular alternative for chicken and it being New York they are easily found in china town. Have you heard of this and do you have any recipes using the mushroom stems?

HEB Olive oil. Must of been from your stop in Texas. That’s our local grocery. They are pretty damn good and have outstanding responses to emergencies. They did so much for our gulf coast during the last hurricane.
