    If anyone begin to want real Matcha, there will not enough for everyone, right ? After all, it's just Tea leaves, what about cultivate your own tea in the garden, and simply pick up some fresh leaves everyday in spring ? Then make your own powder for the rest of the year ? So you can make a local product. What do you think about it ?

    That is so true with matcha having such a varied flavor profile from one ot another. I tend to prefer matchas with earthier notes, reminiscent of dark chocolate & vanilla.

    Dilute the powder with a bit of room temp water to make a paste. Then hot water.

    How do you clean the mills after the work is done? It seems there is so much matcha sticked to the surface that could be wasted in process of cleaning. Hope you found a way to extract it from surface and drink it before clean up

      Horsehair brush is used for cleaning. The partially ground tea in the mill is waste product.

    It makes sense to say it has to be this particular leaf. Because that obviously affects the flavor. I don’t know if the stone milled affects anything like the consistency but it might. But it always annoys the hell out of me that things like Champagne need to be made in some particular valley. Because if you do the exact same thing with the exact same product 20 miles away, it suddenly isn’t the same thing anymore. Just arbitrary nonsense.

      This concept is know as terroir, where the product changes in taste - ever so subtly, depending on the local whether, soil composition, and local fauna and microbiome. In some cases, like Uji, there’s a long history, multi-generation family farmers. Some people might want to taste the subtle, but distinct taste of tea (or wine) grown in a very specific region - which is why ujicha or champagne has higher prices than somewhere 20 miles away. Others, like yourself, may care about this less - which actually benefits everyone. Those areas 20 miles away will be more affordable and more available so you don’t have to waste money on the product if you’re less sensitive to its sourcing details.

I've literally watched more matcha tutorials than I can count trying to decide if i really need the bamboo whisk and all the "special" tools I'm so glad I found your tutorial!! It was easy to understand and most of all confirms the most important thing I needed to know Glad to know just purchasing a sifter is the most important 😊

    Pity you had to try to convince us organic food production is not beneficial, like pesticides that are destroying insect lives and bees are somehow similar to coffee, in japan the organic movement is really picking up and finally people are seeing the damage to the environment of non organic farming, it’s a pity as I was starting to enjoy your channel

    I’ve been drinking raspberry leaf tea and it tastes really good and it said to have some really helpful properties. Although, it also is indicated to have “tannins”. Can you tell us anything about it and if it is real tannins or is it pseudo tannins? Are there any benefits about tannins?
