Jersey Kale Bonda!
Hello!
For these delicious bondas, we used a type of green known as walking stick cabbage or Jersey kale. You can see how rigid and robust the stalks are in the video. However, historically on the Channel Islands, they were cultivated for walking sticks and they commonly grew to a lofty height of 6 to 10 feet!!
This bondas were so crispy and delicious - we hope you enjoy the video!

The Forgotten Thuni Idli!

Nowadays, everyone greases their idli plate with oil before cooking their idlis to prevent sticking. However a simple cloth is traditionally used to line the idli plate, and a simple sprinkle of water after cooking makes the idlis slide right off! Hi thanks, good observation👍. It cracked the 3rd time we fired up, the heat was quite intense. No further cracks. We didn't see any drop or difference in its functionality 👍👍👍
Excellent. When I saw the tandoor making, I have a question. How do you clean the ash in the bottom?
Thanks! As we put a mesh at the inside bottom of the tandoor, the ash fall to the ground and we just scoop it out. If you asked about the soot and ask deposit inside wall of tandoor, we spray water through a garden hose, between use and when it's cold 👍👍👍

If you are making this with Indian bricks that may have uneven faces, run each sides on a hard surface to get a smooth finish. Hard work but will give a smooth finish 👍👍👍
