Blackstone Griddle - Brisket Leftovers Quesadilla
Просмотров 7514 года назад
Always in R&D. Working those #leftovers to make a quesadilla. 18 hour smoked brisket, pork spares, brown butter truffle mac&cheese, filled with MORE cheese. Diced red onions, green serrano pepper and topped with a citrus spicy green sauce. I’ll call it the “Yippee-Ki-Yay”! Still need to fine-tune... any test taster interested? 😂 . #barbecue #smokedbarbecue #smokedbrisket #calimexbbq #pitmaster ...
Trager Timberline 1300 - Weekday Brisket Cook & First Impressions
Просмотров 30 тыс.4 года назад
One month review of my Traeger Timberline 1300. I decided to do a “weekday brisket” based of a video posted by Matt Pittmen of Meat Church. Started the brisket at 8 PM on a Tuesday night and had it for dinner on Wednesday. Low and slow cook for over 19 hours!

Traeger must have figured something with SuperSmoke on the second gen Timberlines. My first gen will turn food black when I use that. I've pulled the shelves and heat shield out and can see black smoke come out when the fan cycles off. I assume you have not had that experience with this one? Also, confident man unwrapping a brisket in a white shirt! :-)

Lol! Hey man, everything in life is a learning experience. I too bought the whole set up with the side and it took me about 18 hours to build mine, & got it at lowes. I had to take breaks due to 'dad' and 'hubby' duty, but once I was done, (about midnight) lol, I went ahead and seasoned it, inside and outside. I saw another youtuber that did what you did with the bacon grease and veggie oil and said it was his third smoker, so I kinda trusted that. I used the charcoal side and the gas side, but later on today, I will be smoking my first set of baby back ribs and Memphis style ribs. To be honest, I used commercial smokers when I worked as a chef back in the day, but today, will say if all that 15+ years of chef-ing it will pay off! lol! Good video and keep on keepin on. We only learn thru trial and error, just like with life.

What I did for the propane side was alternate the burners. I noticed that the temp was getting too high so I shut down the 2nd and 3rd burners leaving number 1 going. Let it go for 45 minutes, then I started the second then shut down the 1st and so on. Doing it this way the inside temp never went above 350º.
