I just heard my favorite thing... took the time to make sure nothing will be chewy.
Wagyu is expensive and honest lts not worth the price, especially with this economy.
This is a half breed of wagyu. It’s less expensive than pure bread with similar benefits. At the moment it’s about the same price as it’s prime beef counterpart. We want to be able to offer less expensive alternatives to A5 wagyu which is one of the reasons we like to bring it in.
Boning knife? I was taught 6inch boning, 8-10 inch breaking for everything else

I had Saga and Kobe beef in Japan and Kobe is definitely better. I have had Kumamoto and Miyazaki beef here stateside and Miyazaki is better imo.

Finely ground black pepper makes for a nether sear. It makes sure the meat is in contact with the pan. Do not cook your steak like this. Just use salt, pepper, and baste the steak with butter and thyme
That wasnt rare... Also you should try using Salt and granulated garlic, Look into Garlic Salt, its hot garbage and has little to no garlic in it.

All of that will burn before the steak is even cooked. Nice crust if burnt spice is rotten
Yeah I’m not sure how smoked paprika prevents the pepper from burning…
You should try a spice mix I made myself, a generous amount of Lemon Pepper, Montreal steak seasoning, a little normal pepper and a bit of salt. It goes good on fried and scrambled eggs, T bone and ribeye steak, and chicken legs. The combination of spice and tang flow perfectly and the salt is to weaken the strength of the taste a little.
Thanks for the suggestion, we’ll have to give it a try. I’m not the biggest fan of Montreal steak spice but maybe this will change my mind!
