THE Dip Makes: 1 3/4 cups Ingredients: 1 1/2 tablespoons olive oil 1 sweet onion, diced 1 1/3 cups Greek yogurt 1/2 cup @kewpieusa 2/3 cup finely diced cornichons (15-20) 1 tablespoon minced dill 1 grated garlic clove salt and pepper to taste 1. Place a pan over medium-low heat. Add oil, followed by diced onion. 2. Caramelize onions, stirring occasionally, about 12 to 15 minutes. Remove from heat and set aside to slightly cool. 3. In a mixing bowl combine Greek yogurt, kewpie, caramelized onions, cornichons, dill, and garlic. Season with salt and pepper. 4. Fold together and serve!

Honest question: I keep seeing videos mainly where people enjoy iced pumpkin spice latte. Is it a trend in the US that pumpkin spice latte is mostly an iced drink version and not hot? Or only in California, Florida and warmer states? I’m from central Europe and I’ve never seen it being sold in a regular coffee shop (idk how about SB chain tho) served with ice in Autumn😃

Chili Crisp Makes about 2 cups Ingredients: chili crisp: 1 1/3 cups neutral oil 2 thinly sliced shallots (about 1 heaping cup) 6 minced garlic cloves (about 2 tablespoons) 1/4 cup crushed dry roasted peanuts 1/4 cup crushed red pepper flakes 2 tablespoons toasted sesame seeds 1 tablespoon gochugaru (Korean red pepper flakes) 2 teaspoons minced ginger 2 whole star anise 1 tablespoon sugar 2 teaspoon salt 2 teaspoon mushroom powder, optional 1 teaspoon white pepper 1. Combine oil and shallots in a small pot. Place over medium heat and slowly bring temperature to 300˚F. 2. Fry shallots for 3 to 5 minutes until shallots are lightly toasted and the oil is fragrant. Strain mixture through a fine mesh sieve. Set shallots aside. 3. Pour oil back into pot and bring up to 375˚F. 4. In a mixing bowl combine garlic, peanuts pepper flakes, toasted sesame seeds, gochugaru, ginger, and star anise. 5. Once oil is hot pour over combined ingredients. 6. Allow mixture to sit until all sizzling is complete and has cooled for several minutes. 7. Stir in sugar, salt, mushroom powder, and white pepper until fully combined. 8. Then gently fold in fried shallots. 9. Use immediately or store in an airtight container and refrigerate for up to 3 months.

Spicy Shrimp Hand Rolls Makes 4 Ingredients: spicy shrimp: 5 ounces cooked shrimp, chopped 3 tablespoons mayonnaise 1 1/2 tablespoons sriracha 1 tablespoon furikake 2 green onions, thinly sliced assembly: 2 whole sheets nori, each cut in half 1/2 cup cooked short grain white or brown rice 1/2 Persian cucumber, julienne (thin matchsticks) 1/4 avocado, peeled and thinly sliced, optional 1/2 small carrot, peeled and julienne (thin matchsticks), optional furikake for garnish 1. In a mixing bowl combine shrimp, mayo, sriracha, furikake, and green onion and mix together. 2. Place a half sheet of nori onto a clean surface and top half the nori with about 2 tablespoons of rice. Top rice with a slice of avocado (if using) and a few pieces of cucumber and carrots (if using). 3. Top with 1/4 of the shrimp mixture. 4. Starting with the bottom, shrimp filled corner of nori, roll on an angle into a cone, wetting the ends of the nori to get them to stick, if needed. Sprinkle with furikake. Repeat with remaining ingredients and serve.
