Tiny Girl, Giant Cake: Watch As This 2ft Tall Beauty Gives Her Own Sweet Surprise!
Here she is at her big debut. This 2 1/2 foot tall cake was created in the image of my youngest daughter Samira. I made her for the Nemours talent show. She won first prize for the fine art display last night. This young lady is holding a birthday cake to celebrate Nemours Children's Hospital 12th birthday and proudly displays the Nemours logo on her shirt. She is made of cake, rice krispies treats, fondant and modeling chocolate, including a 3 pound chocolate skull. The structure holding her up is all due to my husband‘s handiwork. Masterpiece In Cake Form: St Athanasius Icon Hand-painted

This cake was made for the consecration of Saint Athanasius Coptic orthodox Church in Sanford, Florida. The icon is of Saint Athanasius and was painted onto the fondant tiles by hand using Cocoa butter. This is a 16 inch tall cake made of four tiers. Each tier is made with vanilla cake and filled with white chocolate ganache and homemade strawberry jam.

This cake was made with graduates in mind (take a closer look). The pyramid had a 12-inch base and was 14 inches tall. It took 4 batches of cake and 8 lbs of ganache. I use a combo of modeling chocolate and fondant for the panels. We stamped the hieroglyphics with a set we got from a museum. The details were painted with colored cocoa butter.

I'm teaching myself to make cookies, can someone tell me what kind of brush she is using for the egg based glaze? Is there something else that I can use just as well that doesn't require a trip to the dollar store? 😅 Also, I've never thought of using a brush for the flouring, I'm used to drop biscuits. I learned so much in 17.18 minutes😅
I am happy to hear that! My husband is Hungarian and in their recipes for honey gingerbread they use raw egg yolk immediately after baking to achieve the yellow glaze. Although the eggs we buy are pasteurized and the yolk is getting cooked on the hot cookie surface ... you may not be comfortable with this method. If not you can use yellow food color gel or powder diluted with a little vodka or lemon extract. I use anything from new paint brushes to pastry brushes to a goose feather brush (from Hungary) to brush the glaze on. Thank you for watching!

@@thecakemd I actually I'm very familiar with that method and have also used it but I was taught just use your [clean] hands and that's part of the reason why I've never really learned to bake because I don't like getting my hands dirty lol
We live in a tropical climate area, it’s really hot all the time. when it gets back to room temperature won’t it melt? Is there anything I can add to help it keep its shape?
I live in Florida☺️ modeling chocolate does pretty well here. In extreme heat it has softened and shifted on the cake but it’s usually fine. Also experiment with firmer . I usually go from 3:1 to 4:1 depending on my needs

What is the difference between using rice flour and regular flour? Is it finner?
since rice flour is gluten-free it is less likely to make the cookie tougher vs the addition of extra wheat flour. I also personally find that the rice flour makes the cookie less likely to stick to the mold vs wheat flour

Have you used it to emboss rather than pushing dough into it? I've seen people roll out dough, press the embosser into the dough to form the front. Then use a knife or cookie cutter to cut around the design. ❤

HI, Could you tell me how you profile and ganache in the hemisphere pans please?
Wasn’t sure exactly what you meant but I line the Hemisphere cake pans with plastic wrap, but I first spray a little baking spray. And then pour a little bit of fresh liquid, ganache into the bottom and try to spread it all over the pan and then settle my cake inside and move it around a little bit to make sure it gets coated completely with Ganache. I put it in the fridge for about 10 minutes then when I take it out, I can remove the plastic wrap and the cake is almost perfectly covered with Ganache … just needs a few touchups.

Sideserf is by far not the first person to use modelling chocolate. She's just a very skilled artist who uses it instead of fondant on her cakes.

As a person of Dutch descent, the cookies are pronounced like this. Spake-u-lass. ☺️ Anyway, I'm trying these for the first time and my Dutch cookbook says to oil the moulds. I've read a comment that it will go rancid over time. Also, I have made one last night and I found that when the dough is colder, it works better. And every culture I find has specific great pastries that other cultures don't make the same.
