That amount of sugar is insane. I used 50% of the listed amount (while keeping the other ingredients the same) and it turned out delicious. Even that 50% of sugar was a tiny bit sweeter. And yes, I did use fresh lemon.

Would using juiced lemons (i.e, as opposed to the 'wholes' you used for this recipe) be a good way to reduce the amount of sugar required to offset the acidity?

the finger test didn't show the jam set , the finger just moved it forward !!
The finger test shows the jam has gelled - as it moves, if it forms a ‘crinkle’ as this shows in the video and feels gel like, the jam has reached the setting point. The jam wouldn’t move forward in this way if it hadn’t set yet. We have more details on testing in the full recipe 😊
