Bait Subaih
Bait Subaih, or House of Subaih, is made up from 10 different farmers of the Subaih family. This roast has prominent notes of dried cranberry and plum with wisps of cloves.
The whole tribe is 60-70 families, all reliant on growing coffee. The land has been passed down through generations, some dating back over 300 years.
These farms are generally very small. Each farm is made of many tiny plots that are usually scattered in different locations around the village, therefore farmers give names to the individual plots. So each farmer will have as many names as he has plots.

    I think 25-28 grams is too much coffee. For me the best ratio is 24 grams coffee to 390 ml water, what George Howell recommended at a video 10 years ago. I always brew with this ratio, it means 1 to 16,25, and I find it perfect.

      You just add equal parts sugar to the hot tea and stir until dissolved. It's just like making simple syrup, you just brew the tea in the water first.

    I wish my 02 paper filters drained as smooth as yours. Mine seems to clog all the time so the brew time always finishes in around 4 minutes

    How would one go about scaling this recipe? Edit: Nevermind just saw the instructions, so take total grams of water and divide by 6 to get pour amounts. Coffee to water ratio is about 1:16

    tried almond milk in my espresso, it no longer tasted like a cappucino , barista soy milk is fine , but it does not come close to the taste of whole milk..... the question is ....... does oat milk also create a disturbing beverage as well?

    Can we just stop with this side pouring out of the carafe thing? Somewhere someone decided that it looked cool to bypass using THE SPOUT DESIGNED FOR LIQUID TO POUR FROM, and started pouring from the side. I see waitresses do this all the time. It’s asinine. Use the spout. Sorry. Pet peeve!

      If restaurant wait staff do it with water, it’s typically so that they can get ice into the glass (the spout won’t usually allow ice to pass). If they do it with coffee, I can’t speak to that though
