I created a version of an old favourite using the Weber Smokey Mountain. These ox cheeks were smoked for 3 hours, then braised in just water and vegetables for another 3 hours. the cheeks were wrapped and rested while I strained the braising liquor, added butter and a splash of red wine and reduced it until the flavour intensified. I was really pleased with the results.

Sorry Imnot impressed how you present your recipe, you don't show everything, how must I know how you fill the belly, roll it, tie it, Was olive oil used before you put mixture into belly 😮

Good work fella! I always have Frenchies Mustard to hand but try that with harissa. With a lamb shoulder wrapped and cooked in stock, a bunch of parsley, and onion, then get it well smoked.

Great description! I am trying to recreate(borrow🤔), the smoked lamb belly band mi from Hometown BBQ and am going to try with your recipe. I willlet you know how it turns out. THANKS
Could you have reversed seared on the Weber smoker? Just take out the middle section and sear right over the coals? Or would that not work?

Cooking is actually much easier than many people think. Combine things that taste good together, don't burn them, and you're done!

Ha! Thanks man. We've had it again since and a couple of friends have done it too. It's an instant favourite. The cat features on a lot of these videos, I promise he's well fed he's just so greedy!
do you two have any recommendations on how to better perfect this dish, or will you do the same technique next time? I’m not an onion fan, but love garlic, so when i attempt this, I’ll be leaving out 90% of the onion. would you recommend adding anything like tomato, potato, herbs, sausages, veggies, or anything else? it seems that you could add whatever you want to this & have it be a Home Run every time. thanks for sharing!
Hey thanks for commenting. This was the first time we'd tried this dish but I think that when we try this when we're camping for real we'll likely bung any and all leftovers in from the night before so will let you know. I do like the idea of adding some cubed, par cooked potato in there and maybe crisp them up in some of the bacon fat before the rest of it goes in...
As a fellow brit i can relate to eating to much of "that lamb" 😅

Had a wing mission recently. Pat them dry as you can then Just a tiny pinch of baking soda. Season with celery salt and then more celery salt then bath them in tabasco and a butter melt.
