You should try to outrun the goatman while flying/wallruning.

What i do when Doppel spawns: I just walk, thats it, i just simply walk while opening doors since Doppel also walks if i do. I do this until he gets tired and leaves, but that usually drains about half the timer, so if you encounter him, dont waste time, go in a hiding spot when carnation spawns then let Doppel catch you, his effects wears down in seconds anyway
