    You must have removed the exhaust damper cover for the Tip Top temp. to fit?

      This smoker doesn't have a damper as it's just stove pipe I attached when I deleted the stock exhaust and moved exhaust to be grate level

    Thank you for this idea. Tried it today and held 230-240 for almost 5hrs straight before adjusting. Started off at 50/50 top and bottom as you suggested. Don't gotta lug my PBC to camp now. 🙏🏽

    How open is the bottom vent? I used my vortex for the first time yesterday. Bottom vent was at 1 and top completely open. 30 mins and the wings were at IT 185°. Another 20 mins and they would’ve been burnt 😮

      Mileage does vary but I roll with vents 100% open top and bottom

      I was gonna say I use the Weber Heat Controller and mine are done in 25 every time. Not sure how they’re completely unable after that much time with the vortex

    145 is too much. Take off at 135 and it still rising for 5 minutes after you take off grill.

    I just used my vortex for the 1st time today and had the first grease fire ever in my weber kettle. I did bone in chicken thighs. Im not happy at all with the vortex. Will i have problems doing wings with it? Shud i avoid bone in thighs with the vortex?

      Man so sorry to hear that about the grease fire! I've had some big grease fires while cooking with my kettle and the one thing I've noticed in common with all of them is that there is a build up of grime in the bottom of the grill. So I typically will just scrape all that gunk out after a few cooks. If your grill was spotless when you first started cooking those thighs it could have been fat dripping overload. Wings shouldn't have some much fat on them and should be a cleaner cook for sure. I would give the vortex another try! Chicken breasts, drumsticks, wings etc

    Never had venison or elk....does it taste gamey ? I tried pheasant before....thinking it would taste like chicken....took one bite, farted and almost threw up.

      I've acquired a taste over the years but venison is definitely more on the mild side of the gamey taste. Can easily be avoided with a good brine or combo of seasonings. Given your history, I would take a small bite or mix some beef burger in with it if you have ground venison 😂

    correct me if im wrong but how do you get an evenly cook with all the meat? wont the wings closest to the coals get cooked faster compared to the wings furthest?

      Not enough for me to notice for a 45 to 55 minute cook. The heat rises and then bounces around in the chamber until moving toward the exhaust damper. This is effectively a convection oven. Give it a try with your next batch of chicken wings!

    THAT'S exactly what I've been looking for! I've been thinking about mineral wool, but that would look super messy. Carbon felt looks so much nicer, and I love the idea with the magnets. Maybe a combination of both would work well.. mineral wool for the firebox (which gets MUCH hotter), and carbon felt for the large chamber. Maybe even add some fire bricks to the firebox.

      Awesome! Magnets have worked well for main chamber. For the firebox I combo firebricks and ended up just draping some felt over as the heat is too much for the magnets

I was so bummed out when I realised that I need like 3x-4x the amount of wood/charcoal for my offset smoker than for my previous small bbq grill - and then I realised "I need to insulate that damn thing". I mean it's so obvious, it has like 3x the surface area in comparison to a small round bbq grill. I just couldn't figure out how to do it without making it look too ugly (plain mineral wool).. and how to make it non-permanent. So, thanks for that inspiration! :D

    It's looks cool and could be very convenient but I wouldn't be able to get over the size of the thing and that's a dealbreaker for me. Now if it was smaller and didn't protrude out as much then I would give it a go. Thank you for the review.

      Night and day difference if your smoker has very thin metal. It should benefit any smoker but I feel like it will most drastically benefit cookers with thinner metals.

      It seemed like initially there was some sort of gas being released. I believe it might have been factory oils. Fabric seems fine after use. I've probably ran this smoker 3 or 4 times with the insulation on now and everything is holding up. I'm probably going to use safety pins to bind the fabric together and drape it over the firebox instead of magnets since they can't hold up to the heat. I used safety pins on my WSM when I fabricated an insulation cover for it and it has held up great, granted we aren't looking at anywhere near as extreme heats. It's a fun experiment.

    funny i just received the tip top temp. its a simple version of a carburetor choke. works just like one. heck i might be able to make it work on a carburetor. only problem is it has to be attached to the intake to work off the heat. i know I'll make it electric.

    its not rocket science. i made my own diy version. took an old used choke spring, the throttle plate shaft, sheet metal to make the damper plate assy and some basic mechanical skills and the working knowledge of a choke on a carburetor. heck i should go to the junk yard and start designing them and selling. 30 bucks a pop i'll get rich

    Just a dab of high temp silicone......not much just enough to hold the fabric. place a magnet over the fabric over the dab, to hold in place.
