Smoke On The Water BBQ Co.

Our videos are intended for the novice BBQ fanatic to learn from and create their own delicious BBQ. Smoke On The Water BBQ Co. will be transitioning from cooking with two Traegers, a Pro34 and a Texas Elite 34 to a custom built Jambo J offset cooker. We will still continue to use the Traegers for certain items, but our Jambo will be our primary cooker.
First fire in new Santa Maria to work in tandem with our Jambo J3!

This is our first food truck event. We have the Jambo J3 loaded up with 14 pork butts and 33 racks of baby backs waiting their turn!

Continued Education. Today we cook a variety of big meats with our first use of Hickory splits. I talk about a few tips such as knives and instant read thermometers. Big shout out again goes to all of those who support Smoke On The Water BBQ Co. Saturday 5 Jun we make our “official” public debut at the Power Food Truck park in Mesa, Arizona! Pulled pork and Baby Backs with sides are on the menu!

Since there aren’t many videos regarding the Jambo J3 pit, I decided when we picked ours up to provide some videos. We took delivery of this beauty on 26 Mar. 21. Part 3....Sausages after the sear on the Weber Premier charcoal grill.

Alrighty........sausage was seared on the charcoal grill for approximately 3 minutes. As you can see, the casings have split and all of the juices/flavor has been lost. In my honest opinion, I would not sear them again...BTW these are from our local custom meat shop and not the grocery store.

It’s a lot of money, but for competition cooking or just cooking for a lot of people it well worth it. Great color choice you made, looks killer. Are you in AZ? If so, that was a long haul from Burleson, I know they trailer really well and are weighted right.
Yup! We pulled here all the way back to the far East Phoenix metro area! Well worth the trip!
We also use her when cooking at on site catering gigs. She is the center of attention for sure!!

I'm a novice bbq backyard guy. If I was to have a chance of getting a dream pit this would be it. I wonder if Tuffy Stone got one of these yet. I would bet real money on the fact that he has one. 😂

Love the J3’s. I’m gonna get me one of them one of these days. Iv got a trailered reverse flow Shirley now and when they get my next 250gal traditional flow built,I hope I can talk the wife into a Jambo for my 3rd cooker!😂
My wife just shakes her head now!! We just had a new Santa Maria fabricated for us...she augments the J3 for certain events and protiens.

They have changed since we bought ours in March of 21’ but Jamie has all of his prices updated for all models of Jambos.

You know you have a quality pit, when an open door doesn't even slightly disrupt the draft from flowing in the correct direction.
You know it! and she sure is a lot of fun to cook on. We have about 12 cooks on her since we picked her up at the end of March and just did our first deep clean on her.

Hey Chad! little update for ya......I cooked again since our last discussion and I have come to the conclusion that there is not a noticeable difference in running a water pan or not running one. I think it all boils down to personal preference. I might add that since we are cooking on a "horizontal" configured smoker the heat is well dissipated, if one is cooking on a vertical smoker, I think you might want to use the water pan that comes with most of them. In the verticals the heat will obviously move from the firebox and straight to the chimney and I am sure these points could be debated for a lifetime! bottom line........if running a water pan is what you like, run one, if someone tries to tell you different, guess they may not be invited back to the next party!!! SMOKE ON my brotha! have fun with it! That's what it is all about!
