Raspberry Lemon Cake Recipe
Ingredients:
+ 1 cup coconut brown sugar
+ 9 tbsp unsalted butter
+ 3 eggs
+ 1 tsp vanilla extract
+ 2 cups cake flour
+ 2 tsp baking powder
+ 1/2 tsp baking soda
+ 1 tsp salt
+ 1 cup plain greek yogurt
+ zest of 1 lemon
+ Rasberries for topping
+ 1 Jar Raspberry jam
Preheat oven to 350F and butter and flour round cake pans.
Mix the butter, sugar, and lemon zest together.
Add vanilla and beat the egg yolks in one at a time.
In separate bowl whisk egg whites until soft peaks foam.
Whisk together cake flour, baking powder, salt, and baking soda in separate bowl.
Add dry ingredients, butter mixture, and yogurt together.
Mix in egg whites.
Add batter to each cake pan and bake for 30 minutes
