Today I am eating snail broth rice noodle soup as known as luosifen. It's a famous noodle dish from a city called Liuzhou in the Guangxi region of China. I was introduced to it by a friend and I love it. It's broth is made from stewing river snail and pork bones along with a wide range of spices. It's usually served with pickled veggies, tofu skin, wood ear mushrooms, peanut, and chili oil. I would describe the flavors of the end result as salty, sour, unami, and hot.
