  • It is time to fully reveal Lallemands new IPA yeast Pomona, which I have been lucky enough to test before release and I predict that this will be even more popular than Verdant for various reasons included in this video.
    Within this video is a great deal of information about this yeast which is quite simply everything you need to know as well as other very useful information including test data , hints and tips and much much more.

    Pomona is available in Brewery packs (500g) currently and the Sachet (11g) version will be available during this summer.Also the audio is abit lower in this video than usual, sorry about that but turning it up works :)

    I'm not surprised Lallemand have developed another NEIPA yeast, especially with WHC developing some very interesting looking-competition

    Great video David, really looking forward to this one coming out, if it's anything as amazing as Nova Lager, it's going to be a hit for IPA's and hop forward beers.
    P.s noticed the audio was a little soft.

    Thanks, david great video of course. Excited to try it. Thanks for explaining the development process. Can I think of this as a hybrid genetic two known strains? Which two strains are these most similar to?

      Hi Mark, this was sterling and cerberus originally but it has developed greatly as explained in the video.

      @@DavidHeathHomebrew OK I picked up on that, I guess I'm surprised its two yeasts I've never heard of. Do they have counterpart strains with other brands that might be more familiar?

      Not that I know of but keep in mind that they have been developed further, so the best way to judge this yeast is from its profile descriptors included with this video, as well as the comparisons with other yeast.

      Cerebrus is Sach Trois. Sterling is a Scottish Ale strain.

      @@elproducto2340 ah thank you! That’s helpful! Imperial makes “dry hop” which is a blend with sach trois, very nice! Not the same at all but Good to have another point of comparison

    I saw on Lallemand's Instagram post that homebrew sized packs might take another month or two. Bummer. It sounds like an interesting yeast to try.

    I'm curious to see how this yeast compares to the huge Verdant krausen which has proved challenging in fermenters with limited head space.

    Wonder if they could make a yeast that lowers ph to prevent tannins from hops without the need for acid. Maybe after the WP hops the damage is already done though? Or maybe a yeast that can remove hop/grain tannins that would help Scottish breweries that can’t seem to make a pale without tannins

    Any idea if NEIPAs will be less susceptible to oxygenation during transfer/bottling?

      I have no details on that, so I suspect not. However it is a case of not splashing. Start the flow slowly, it works for me 🍻🍻🍻

    Anyone else have problems with the volume of David's videos? I have both the system and RUclips volumes maxed on my Dell laptop, and have trouble hearing it.

      Hi Mike, This video is not as boosted audio wise as my usual content. However this will only be an issue on devices that are not able to boost themselves, so it will only affect some devices. So I suggest trying it wilth your phone or tablet instead. Sorry about that.

    I working on modifying a recipe that uses 2 wyeast 1318 london ale smackpacks in a 23L batch, but want to try Pomona as soon as the small packs become available. Any recommendations on how many I should probably use? OG should be around 1.070. I find it difficult to reverse engineer the wyeast pitch rates to alternative yeasts like pomona or verdant ipa yeast.

      ​@DavidHeathHomebrew just one last question. The original recipe I am basing mine on with the Wyeast recommends a 14 day fermentation with dry hops added on day 7. Following your information in the video, showing an average of 9 days including dry hops. What would you recommend to aim at for total fermentation and moment of dry gopping? I'm using Citra and Mosaic cryo hops for the dry hopping.

    Is this an LAIII variant similar to Verdant, but with more biotransformation properties? Attenuation looks to be similar to verdant.

      No. It's in the video. It's a hybrid of a Scottish strain and another strain.

    What are your thoughts on replacing Verdant with Pomona in your NEIPA Second Generation?

      Yes, it will be more tropical but thats not a bad thing. I have a new NEIPA recipe being shared next week too 🍻🍻😎

    It's gonna take a lot of boot Lallemand's Voss yeast from my award winning NEIPA recipe. Lal's New England wasn't up to the task. But I look forward to giving Pomona a shot!

      You should be able to turn it up without issues 🍻🍻🍻 Something went wrong in the audio department that means this video isnt as volume boosted as usual., This will only affect a small amount of devices though, so if you have a problem on one device then please try another.

      Sorry to hear that. I use a pretty standard process to give clear audio results. You should be able to listen to it on higher volumes. However in this case something went wrong but raising the volume is a quick and easy fix.

      I have zero desire to keep changing volume for certain videos.
