-Get Universal Unreal Engine Unlocker (UUU) -Inject Nightmare Kart with the base dll -Open in game console and type "fov 120" Repeat for every loading screen where FoV is reset. These steps should also work with 16:9 screens, you'll have to find an fov that works though.
your steps work perfect for 21:9, only thing i have to add for campaign mode or whatever is you need to type fov 120 then enter but after you only need to hit the ~ key for the debug then up arrow for previous and then enter, can be done quickly while track is being shown, also you can unbind keyboard buttons to help as well
