Looks great! I also have had a difficult time finding red beans, and on another thought, i am always confused at people saying there's not much meat on pork hocks. I find there is about a fistful of meat on each one, enough to cut it up and put it back in. Makes it so much better imo. (esp if it's a smoked pork hock)
I ended up just gnawing the meat off the bone and there was like one or two mouth fulls. So yeah it could be added in, but one wouldn’t be enough to fill the dish in my opinion. If you had a couple of them, would likely be enough. Glad you liked the video!
It's called a Ham Hock in the Southern US (where it's most widely utilized in cooking). I've never heard the term "Pork Hock" before watching this video.
