I’m a 40 year old Italian man from NY and I’ve had a similar experience with this family. I’ve made quiet a few of there recipes and now I’m seasoning my own woks and have a bamboo steamer now. Your dad's cantonese sounds so much like the cantonese spoken by my parent's generation too and takes me back to places and times of my childhood. I pretty much ate all the same dishes that Daddy Lau makes on this channel and can almost taste the dishes when he cooks them. Thank you for sharing!

Your dad playing his flute reminds me of the elderly men who brought their birds in their cages to the park, hang the cages in a tree so the birds could socialise with their own kind. While the birds sang the men either played cards or their other games and chatted or played their flutes. I used to love just sitting nearby watching and enjoying every minute of it. I miss China. I totally stand in awe of anyone speaking Guandonghua…it has heaps more tones than Putonghua…and I struggled with that!

I love the sound of Cantonese It’s like music to my ears. I cooked in Hong Kong for many years when I was younger and learnt a lot. Your dad has great knowledge and technique. Pro chef 25 yrs here.
I miss my mother’s Taishanese dishes since she passed almost 40 years ago. Can you feature a few of those? For example, salted fish with pork patty, pork belly with shrimp paste, zhong zhi...I haven’t had these flavors in decades.
Leaving the city a few years ago and moving to a small town I'm unable to get the Asian cuisine I grew up with unless I drive for an hour. This has made me make my own dishes and your father has taken my cooking game to a new level thank you 😊 🙏
Same here I moved from Oregon to TN and I've only found a couple of decent restaurants. And I'm an hour away from the closest one. I bought a bunch of veggie seeds so I can grow my own.
I was lucky enough to order Chinese broccoli at a restaurant in Little Saigon, Westminster CA last Saturday to go with a 4 lb lobster, cooked house special (black bean garlic sauce and chopped green onion, mostly). The server was kind enough to tell me the Chinese broccoli was flavored with oyster sauce. Unbelievably delicious!! I looked up this video and your father's recipe and bought some Chinese broccoli at first opportunity. Tonight I cooked it exactly as he specified, to go with thin-sliced Kurobuta pork from our local Japanese market, pan seared with finely ground salt and pepper, and rice. OMG. The broccoli was exactly as delicious as we had in the restaurant, maybe even better. The two of us ate almost the whole lb. Your father is a jewel, a star in my cooking firmament. I'm an experienced gourmand and amateur cook. Please do thank him for me. And thank you and your mother for the detailed instructions, too. Marvelous. 5 Stars.

@@mparthur144 Not a good idea to store in standing water. You need to store it relatively dry to avoid rioting. But soak it 30 min before cooking to rehydrate it.

Lovely cooking tips.Gai Lan is my favourite of all vegetables. I used to buy it every week in London Chinatown. When I was living in East Africa I missed it so much I bought Gai Lan seeds online but it did not grow. Choi Sum grew very well.
I appreciate you for having a channel for Cantonese dishes and especially taught by a dad that knows his stuff. I'm a first generation Chinese-American so I haven't had much experience and knowledge cooking Canto dishes. Great to see that there's a lot of dishes like this one, which are easy to follow along and cook.

In the West Indies we call this "poi". Every house has this in their kitchen garden. I always plant it in the summer in pots and it grows like crazy. I wash and store it in the freezer for the winter. It's so good for adding iron to your diet. That's for sharing your dad's and mom's wisdom.❤️

No pics, sorry. I accidentally put the fish in the wok before coating it with the batter, so I took the pieces out, battered them up, threw them back in the wok. The extra handling broke them up and made them rather ugly. The excitement ruined my timing, so I just threw the gai lan on the plate and they looked like a pile of old clothes. It was delicious, so pics next time!

One thing, I wouldn’t put the lid on while boiling ...helps prevent yellowing, but that’s when I parboil slightly before stir frying. Parboiling it a minute before stir frying helps to keep its vibrant green & not much nutrient is not lost in the process.

I tried making this today. OH MY GOD!!! It was THE BEST broccoli and gai lan i've ever made in my life!! Thank you so much for sharing this with us. I was able to feed my family an amazing restaurant quality dish which I made by myself. Thank you for empowering your viewers with knowledge and wisdom!
This covers pretty much everything. Practically how I do cook and prefer gai lan. For cooking the whole (not sliced) stems and leaves so they are cooked perfectly, the obvious answer is to just cut them in half before you put them in the water. Stems in first then leaves. Leaves out then the stems. This also allows you to cook the stems for far longer for folks who can't chew as well. Or you can do what Daddy Lau did and slice down the stems and cook the gai lan whole. I just find cutting the gai lan in half easier and I prefer whole stems for a stronger crunch. Also, this pairs really well cooking wise with steamed eggs or whatever. Steam whatever you want first then cook the gai lan.

I recently ordered gai lan at a restaurant, I wanted to try something other than the standard broccoli. I've been cooking gai lan a lot lately, and my results have been hit or miss. Now I will have perfectly cooked gai lan, every time! Thank you!!!
Last week I cooked Chinese broccoli because I’m trying to eat leafy Greens every day. It didn’t come out good. Not enough heat and speed. I tried Daddy Lau’s recipe. Life changing. The same batch of greens a few days older tasted so good. I don’t have hoisin at the moment but I dipped it into a Thai fish/chili sauce I happened to have. Wow! This can be made with any flavor profile from any country. It cooks so fast in 2-3 min there’s probably barely any nutrient loss. It’s basically a blanching technique. Thanks daddy Lau!
I wanted to try this method but I had no gai lan. So I tried it with baby bok choy and the taste was an exciting surprise. This method brought out the rich but delicate flavor of the bok choy in a way I have never experienced before. All my guests at the table devoured it. From now on I will cook my veggies this way. Everyone, try it...it's an amazing and unexpected surprise!
I have cooked in a wok daily for about 15 years.I do my chinese broccoli by stir frying successfully, I am told.I eagerly tried to do your dad’s water method and got a lot of mush ! Because I don’t have his expertise!I will keep trying his recipes.He has such good energy.

@@mparthur144 Not a good idea to store in standing water. You need to store it relatively dry to avoid rioting. But soak it 30 min before cooking to rehydrate it.

Lovely cooking tips.Gai Lan is my favourite of all vegetables. I used to buy it every week in London Chinatown. When I was living in East Africa I missed it so much I bought Gai Lan seeds online but it did not grow. Choi Sum grew very well.

In the West Indies we call this "poi". Every house has this in their kitchen garden. I always plant it in the summer in pots and it grows like crazy. I wash and store it in the freezer for the winter. It's so good for adding iron to your diet. That's for sharing your dad's and mom's wisdom.❤️

No pics, sorry. I accidentally put the fish in the wok before coating it with the batter, so I took the pieces out, battered them up, threw them back in the wok. The extra handling broke them up and made them rather ugly. The excitement ruined my timing, so I just threw the gai lan on the plate and they looked like a pile of old clothes. It was delicious, so pics next time!

One thing, I wouldn’t put the lid on while boiling ...helps prevent yellowing, but that’s when I parboil slightly before stir frying. Parboiling it a minute before stir frying helps to keep its vibrant green & not much nutrient is not lost in the process.
Keeping it covered keeps the water boiling.

Love this channel! Only one that I subscribed to! My parents from Toisan, dialect pretty similar to Cantonese, love Daddy Lau’s cooking style and i understand him very well! Tell him to cook up some watercress! Any vegetable dish is good! Salty fish! Dishes that aren’t sold in restaurants!

This covers pretty much everything. Practically how I do cook and prefer gai lan. For cooking the whole (not sliced) stems and leaves so they are cooked perfectly, the obvious answer is to just cut them in half before you put them in the water. Stems in first then leaves. Leaves out then the stems. This also allows you to cook the stems for far longer for folks who can't chew as well. Or you can do what Daddy Lau did and slice down the stems and cook the gai lan whole. I just find cutting the gai lan in half easier and I prefer whole stems for a stronger crunch.
Also, this pairs really well cooking wise with steamed eggs or whatever. Steam whatever you want first then cook the gai lan.

I recently ordered gai lan at a restaurant, I wanted to try something other than the standard broccoli. I've been cooking gai lan a lot lately, and my results have been hit or miss. Now I will have perfectly cooked gai lan, every time! Thank you!!!

Last week I cooked Chinese broccoli because I’m trying to eat leafy Greens every day. It didn’t come out good. Not enough heat and speed. I tried Daddy Lau’s recipe. Life changing. The same batch of greens a few days older tasted so good. I don’t have hoisin at the moment but I dipped it into a Thai fish/chili sauce I happened to have. Wow! This can be made with any flavor profile from any country. It cooks so fast in 2-3 min there’s probably barely any nutrient loss. It’s basically a blanching technique. Thanks daddy Lau!

I wanted to try this method but I had no gai lan. So I tried it with baby bok choy and the taste was an exciting surprise. This method brought out the rich but delicate flavor of the bok choy in a way I have never experienced before. All my guests at the table devoured it. From now on I will cook my veggies this way. Everyone, try it...it's an amazing and unexpected surprise!

I have cooked in a wok daily for about 15 years.I do my chinese broccoli by stir frying successfully, I am told.I eagerly tried to do your dad’s water method and got a lot of mush ! Because I don’t have his expertise!I will keep trying his recipes.He has such good energy.
