    Thanks for super ideas for quick and delicious healthy meals, I have to disagree though as
    I’m actually a huge fan of my Mam’s mashed carrots and parsnips , simply divine, I think because it’s cooked with such love and I have wonderful childhood memories of dinners together , it was probably full of butter and seasoning 😂

      Hahah I love that it brings up those memories for you. In fairness my mom hated parsnips so we never had the mash. I always liked veg (my dad had a habit of buttering things a bit too much as well) but i remember going to friends houses for dinner and realising why they hated veg when you got watery mashed carrots and parsnips.

    A few times per week I steam up a a bunch of broccoli and roast a pan of Brussels sprouts. If I can get organic yellow squash and zucchini, I'll make a pyrex dish of sliced summer squash with onions, whole organic cloves of garlic, olive oil, salt and pepper. Occasionally I will buy 3 or 4 bone in, skin on chicken thighs and cook them with butter, rubbed sage, horseradish mustard and salt and pepper (425 degrees F for like 45-50m). With this stuff in the fridge, it is super easy for me to nuke a plate of broccoli and wolf it down, like, well, a wolf. I reheat a chicken thigh in my air fryer. If no chicken, well then, I'll eat a portion of smoked or canned salmon or smoked mussels. Or I'll just eat a much larger portion of broccoli, which is like so big and not even 200 calories. I use Chronometer to track my calories. FAGE 5% yogurt: 154g this morning for 145 calories. Lunch: 351g of broccoli with 1T of olive oil, 12g of parmesan, 124g chicken thigh with skin, 10g Brazil nuts (for the selenium) and 29g dried prunes (because I love them) and that all added up to 743 calories. Dinner: 120g sirloin burger, with 60g of Shiitakes cooked in olive oil and topped with a little toasted sesame oil, and leftover fresh roasted asparagus (or the aforementioned Brussels sprouts. That plate is 562 calories. I'm nearly 60 and daily I burn more than my BMR every day, so that I can EAT. Today: BMR=1073. Imported activity: 1254. Yesterday my imported activity was 1600+, because after exercise, I was doing laundry and other things around the house that pushed my calorie burn way up. I do LONG walks outside that take HOURS, today I did a 14 minute isometric workout that was basically wall squats for 2m holds, then I did 70m of hiking on my Peloton Tread. Tomorrow I'll do the long walk, then I'll do 90 minutes of real working out (goblet squats, pullups, pushups; then side to side lunges with weights and push presses, then I do a ton of "jumping". Split jumps, jump knee tucks and jumping onto a 20 inch "play" cube. I burn about 850 calories outside every morning, about 350 during my workout on workout days, (isometrics only burns like 12 calories) and I burn 150-350 on the Peloton Tread. Obviously on workout days, I do a little less on the Tread. On Isometric days, like today, at least an hour and likely more on the Tread. Doing this means I can enjoy some dark chocolate smeared with almond butter or a small portion of macadamia nuts, now, these are among my favorite foods, chocolate with almond butter and god, I love macadamia nuts. But these foods pack a ton of calories! Sometimes lately, if I am really good and have a few hundred spare calories left at the end of the day, I'll eat 1-3 Lindt truffles, seriously, right before I brush my teeth for bed.

      Thanks Suzanne. I feel having a stock of them in the pantry stops us from the f**k it attitude of ordering a pizza. When we have them we know we can make a decently healthy dinner in minutes!

      Haha why? It's my Mom's. She leaves it here, being a fancy lady she only likes to drink from a China cup (which she got in the charity shop for €4 I think!)
