Jamaican Yellow Belly Sweet Potato Pudding ( part 3 final )

Spiced Liquid:
4 cups coconut milk
1 1/2 cups brown sugar
2 tbsp vanilla
1 tbsp yellow almond
1 tbsp molases
1 oz white rum ( optional )
3 tbsp spoon ginger juice
Dry Mixture :
4 large slices of bread
1 cup pastry flour
1/2 cup bread crumbs
2 tbsp cinnamon powder
1 tbsp mixed spice
2 tsp freshly grated nutmeg
1/2 tsp nutmeg maise / powder
1 tsp salt
1 cup mixed fruits
5 cups grated potato
2 tbsp melted butter / margarine
1 lb grated yellow yam
Soft top :
1/2 stick butter / margarine / melted
3/4 cup brown sugar
1 cup spiced liquid
This yeilds one original 9 " pudding
