COD IN BATTER & SPICY RED ONIONS JAM | Christmas dinner

Recipe for 4 persons
Ingredients:
FOR THE JAM
3 red onions
100ml balsamic vinegar
100g brown sugar
400ml water
Spicy pepper
FOR THE COD
350g cod (if you frozen one, be sure is good defrosted)
200g flour
200ml cold sparkling water
Salt
Black pepper
Thyme
Take out the cod when is great gold and servit with some thyme and the amount of salt you love more.
