If it were me I'd attach 2x4's to the block wall and then hang wallboard, running my piping behind it in the channel created by the 2x4's - I too don't know how I feel about removing the inner face of the blocks on my block wall.
It is finished with mortar and then painted and it is rock solid if you follow some basic rules while making the channels for the pipes and while building the wall. For example you should never touch concrete pillars for any reason and he destroyed them and some common sense when excavating the bricks so you do not have bricks on the air.
I hope these aren’t Weight bearing walls because channeling out all those cinder blocks especially when the penetration basically is cutting the blocks in half which certainly will be an issue with the remaining blocks sagging after everything settles in six months

There are MUCH better solutions to this, but maybe they do not use studs to hang drywall then hide the pipes in that inner wall. I would love a Saudi to explain this.
