Jason, this is the Prince of Wales' motto dating back to the 14th century at the Battle of Crecy during the 100 Years' War. I'd definitely read in more depth, but one possibility is that John, King of Bohemia (John the Blind) showed such chivalry during the battle, fully blind yet still charging into battle out of duty (have a read, I'm really breezing over detail). The Black Prince was said to be so impressed he adopted the motto and the ostrich feathers and is still used to this day. This account is unconfirmed, but I think as likely as any. Nevertheless, Ich Diene, as it's written, is on the tomb of Edward, Prince of Wales at Canterbury Cathedral.
