If you're going to do the custom keyboard anyways, I'm very interested in seeing you tackle it. It's something I've been think about loosely myself. Though, I subscribed to you due to your mechatronics so if there was a poll I'd probably put keyboard slightly below your normal content. But as I said, if you're going to do it anyways I'd love to see the process!
it might sound like a bit too much for your lab, but I really recommend poking around at Home Assistant and ESPHome. they've both matured a lot since i started using them (five or so years), are now pretty easy to setup for most use-cases, and you don't really need much in the way of hardware to get started. like, my HA server is an old HP thin client that cost me $20 and is complete overkill for that task, and my main interface to it is an old Pixel 3XL running the app w/ a kiosk user and custom finger-friendly dashboards.
Quick suggestion, if you want to take a slightly different approach for your unified control panel. Have a look at a cheap “panel PC” and run node-red on it and use the dashboard and serial nodes for communication to your peripherals and whatnot.
Its a cool setup indeed but I hope you didnt print all of the multiboard parts in PLA. They will creep and eventually fail, waiking you up at night and making a huge mess.

The P1s at the company work is called Print Eastwood and has a tiny Cowboy hat sitting on top which was the first print ^^

Tip #16 is so good! 3d printing the switches in the enclosure is brilliant!
