Most Server disagree with your take. 1) Servers have the ability to make upwards of $25-$35 an hour, with even nicer resturants bringing in more. I've seen Servers walk out with $400-$500 working an 8-10 hours (A double basically) at nicer places. This paid for my college and I would have been livid if someone said you only get $15 an hour. 2) A large majority of resturants operate within a 2-3% profit margin. Lets be generous and say its 5%. Your biggest cost goes from food and food waste to labor overnight, without lowering food cost. 3) You will pay even more than you pay now for the same goods. The cost will be passed onto you whether you agree with it or not. 4) The shift to full automation will happen even faster than it is. It will be cheaper to remove servers entirely if they are paid more. None of the above is "fair" and the idea of tipping is annoying to me as someone who survived on them. But without a better system saying we should just pay people more without regard to the consquences is dangerous. If you have answers though I am happy to be moved from these points. I know other countries seem to function without our system, but I have no idea what those workers living standards are comparably.
There is no contract in being a waiter you can quit any time you want and do something else. And no you only tip waiters or waitresses if they are good or nice you won't tip one that doesn't care doesn't refill your drinks and gets your order wrong with a bad attitude. Personally I wouldn't tip a landlord due to equity in houses being a thing. And if they are a smart landlord they are making money regardless of a tip.
Private sector Unions are fine as long as they're optional to join. Forcing people into them is unethical. Public sector Unions need to be abolished absolutely.
