I have a feeling that the spouse would either be a:
1-Same-age Padme(the idea here is that they are in the same age when Anakin is discovered, as in the early drafts of TPM)
2-Probably some human Jedi or Mando OC Pente Patrol created for this video or created in the past
3-An obscure Legends era Jedi
If we have it that Anakin was in his fourties or sometime by the time the Clone Wars start and the Skywalker twins and their middle aged father fight in clone wars together, it could even be Siri frankly

Best guess as to how this could happen is Anakin meets Padme again a lot earlier, and a teen romance happens (quite under-age on Anakin's side at least), unless this story rests Anakin's age as older than canon. If it is the first instance, Luke and Leia would be pre-teens, so I won't be surprised if it is the second concept.
- What if Anakin drank from the Font of Power and/or bathed in the Pool of Knowledge like Abeloth did?
- What if Vader returned with Thrawn to Lothal? / What if Thrawn won the Battle of Lothal?
- What if the Clone Wars were brought to Earth? (Cold War era or modern day Earth)
- How would nuclear weapons play into it, if at all?
- How would countries align? (Ex. NATO x Republic)
- What if Anakin was secretly the template for the Clone Army?
