I always read comments/reviews on recipes and I’m always skeptical for some reason. Especially for a good, authentic sauce/lasagna. I never write reviews either. This recipe was hands down the BESTTT lasagna and sauce recipe ever. I simmered the sauce for 4 hours and added rosemary, bay leaves, and some red pepper flakes. Absolutely incredible flavor. My roommate said it was better than his grandmothers who’s been making it for years. 100% recommend.

I personally used Sazon seasoning instead of oregano, used one pack of ground beef (1.3 lbs) but no sausage, did not use fennel seeds, nutmeg, or sugar, & used regular parsley & basil rather than fresh ones, yet it still came out AMAZING!

Been making lasagne for quite some time now but adding ricotta cheese has been my new addition. I used to boil by lasagna sheets but when she said I could just soak em while I make my sauce I was mind blown! And it worked! It worked so well that I’m never gonna boil my lasagna sheets ever! The lasagna is in the oven at the moment, it smells divine. Can’t wait to dig in and also adding fennel seeds to the mince seems like a good idea. It made the mince smell and taste so good 👌🏼
@@ciganyweaverandherperiwink6293 Fennel seed is a must for lasagna. Adding some to spaghetti sauce is also great. There's one (that I know of) canned/jarred sauce that has fennel in it, too, which is Newman's Own Marinara. It's great. I prefer Mutti (and I just add some fennel), but Newman's Own is a very close second.
Seriously guys, this is hands down the best lasagna I’ve ever had in my whole life and that’s no exaggeration! I made this today for Father’s Day for my family and my dad and husband got so full and couldn’t move because they couldn’t stop eating it! It’s so true that the key is to let the sauce simmer, I cooked the sauce on the stove first for a hour and then after I simmered it in the crock pot for 2 hours on low and 2 hours on high! I didn’t add fennel seed but it was still so delicious!!!!!! Im still in shock how great it tasted you guys! Please please please try this recipe you won’t be disappointed!
I think I would have sautéed the onions too and sweated then put with some salt and pepper, then putting in the garlic, then cooking the meat. That way you have beautifully Caramelized onions in your meat sauce that melt just into the sauce.
OR ... just use an excellent jar of marinara with all the herbs, spices and veggies already in it and just mix it with the meat. :D Way faster. Just as good.
@@FemmeFatalee haven't looked into what sauteeing onions is or is like but do you think i could caramelize the garlic and onion then blend it into the sauce? I think the flavor in sauces is really helpful but im just not a fan of the texture of onions

Dina Kemp I follow the recipe but for the cooking time I use a thermometer to check the center. I remove it from the oven when it reaches 165 degrees. Then I let it rest for 20min before cutting.
Someone made this at a get-together and I asked him to send me the recipe and I make this all the time now. Everyone says it’s the best lasagna they’ve ever had!! One thing I omit from your recipe is the fennel seeds and I always add about 1/4 tsp of cayenne pepper.
My friend is allergic to onions and this turned out fantastic omitting them. You can't get fresh parsley often where I live so I substituted dry (1 tsp dry for 1 tablespoon fresh) then added fresh spinanch for the fresh flavor) I simmered the sauce in a crockpot and it turned out exceptional. Thank you so much.
That cottage cheese mix used instead of the classic white sauce is a game changer. I trusted your recipe and it changed my taste for lasagna forever! I used lamb mince instead of the Italian sausage. I also sautéed the onion and the garlic then added the mince beef and lamb in. I used instant lasagna sheets which do not require pre-cooking. Other than these, I followed the recipe exactly as explained and the lasagna turned out beautifully. It is so light and easy to eat. The sugar you add bring out all the flavours. Just beautiful.

I made this recipe but I made way to much sauce , I made three lasagnas one I froze the lasagna after I made it , one month later I needed to be served , well let me tell you it was so tasty very fresh. The meat sauce I had a lot left over again I froze in containers . I have used that sauce it taste so yummy . Thank Stay at Home Chef for this amazing and delicious recipe.
Made it today. It's NOT one of the best. IT IS THE BEST TO DATE. Exactly, well almost. Forgot the sliced mozzarella but did replace it with shredded. Still came out great. Thank you. Already copied the recipe for when travelling, in csde I get the urge.

Update: I made this and the family LOVED it. My only change is with the draining of the meat. She doesn't tell you to drain the meat before adding the tomato-based ingredients etc. I recommend you do or you'll end up with any overly fluidlike sauce. I had added all the ingredients and had to end up using a collander to drain it. I had a bowl of loose sauce left, which i scooped two spoonfuls back into the meatier concoction, which matched the consistency of what she put at the bottom of the lasagna dish. THEN it was perfect. I think someone said on here the chicken broth was unnecessary and it probably was. I am not sure what the chicken broth actually does for this sauce.
The chicken broth allows the right amount of liquid expansion for the sauce to simmer for a few hours without burning, as old Italian tradition intended
This sounds awesome with fennel seeds! Mind blown with the soaking noodles tip😳!! I’ve got a little trick for the tomato paste, use a can opener on BOTH ends of the can, remove one cut lid & and push the paste out using the other lid! So much easier! Can’t wait to try this!! Thank you!
Terrific recipe. It was absolutely delicious. I substituted the sweet sausage for mild. It was my first time making a lasagna with non store bought pasta sauce. The sauce was delicious and the family loved it. I also love how the video shows step by step instructions and how you are very straight to the point with your directions in this recipe. Made this recipe! I sub the herbs with Italian dry herb pack. Skipped the chicken stock. Halved the recipe, but kept same amount of garlic and tomato sauce. Also didn’t use any nutmeg. Added oregano into my ricotta mixture because I love oregano! This a great base recipe which is super adaptable. subscribed !!!

I just made this today. The only thing I changed was to substitute five bay leaves for the chopped basil (I just didn't have basil) in making the sauce, which I (of course) removed before adding to the layers. Delicious. Perfectly seasoned. It's definitely going to be in my cooking rotation now.

20 years ago I made my first lasagna. It was simple but time consuming. I've always made it the same and it's well loved but I think I'm going to make 2 changes. The noodle idea is genius and so are the cheese SLICES! Thanks!
Hey guys just a couple tips! Use oven ready lasagna noodles so you won’t have to do anything to the noodles. Also make this the day before so the flavors really can melt together. Trust me your lasagna will be a lot better.
Okay, I just tried this for the first time last night! It took a very long time and it isn't really a cheap thing to make but it came out so so good!! I very much recommend this!! A few things I would change though is adding more meat sauce so the cheese isn't so over powering. Making mozzarella and parmesan cheese the last layer so it looks all cool and yellow and cheesy on top. (i repeated the pattern and it ended with meat sauce as top coat still yummy but didn't look as cool lol) ...and lastly (i could be wrong) but I heard hot tap water has a lot of bad things in it so I just put cold water in a pot and boiled the water and poured it over the noodles.......just be careful maybe don't pile them evenly on top of each other spread as much as you can and maybe a few time flip them or move them around because mine ended up sticking together and then ripping apart when I tried to separate them. BUT VERY YUMMY!!!! HIGHLY RECOMMEND!! :)
I love this recipe. This was my first time ever making lasagna. I went almost to the T on this recipe because I’ve never cooked lasagna before and I never really liked lasagne but I cooked this for my father in law’s 87th birthday dinner and since she said it was the most amazing lasagna, I took her word for it. Everyone loved this recipe. The only thing I did differently was I used 3 lbs 80/20 ground beef because I already had it in the fridge and I needed to cook it. I also added more nutmeg. I just didn’t feel like 1/8 tsp was enough. If I add an ingredient, I want to taste that ingredient. It was not disappointing. I also added the fennel to the ricotta cheese. It was really good. I highly recommend this recipe.

I used to use ricotta for my lasagna until about 20 years ago... That's when I decided to start using cottage cheese. Last night, I tried something new that you will love. Try a pint of cottage cheese, a stick of cream cheese and a cup of spinach alll combined together... Yummy outcome...

Recently I started reviewing lasagna recipes looking for one that could be my "go to" recipe. I saw this one and reviewed the video and I did not even look at any more recipes. I agree and am comfortable with each step and ingredient so I will try it very soon. I really liked the "noodle hack". I wonder why people don't put mozzarella on the top. Isn't taking a golden brown bubbly lasagna out of the oven part of the appeal of lasagna? I put cubes of mozzarella in the ricotta and that's it for the mozzarella in the middle. I save the rest for the top.

Thank you, Chef. I finally got around to making this and I had to make some alterations. My wife is allergic to pork so I went with chorizo turkey sausage and downgraded the beef from 93% lean to 85% lean. This seemed to solve the fat content issue. Also, I used 32-36oz of low fat, small curd cottage cheese in place of the ricotta. I just added a bit more parsley and nutmeg, but the single egg was enough to do its job. All-in-all, it was a most excellent lasagna and the kids were fighting for the leftovers later that night. Again, thank you for providing this recipe. I'm subbed now for future recipes. Keep up the great work!
I also use some cottage cheese but I go with a 4:1 mix of ricotta to cottage. It adds a bit more ‘tang’ to it. I’m curious about this hack she talked about with soaking the pasta for 30 minutes instead of boiling. Did that work? 🤜🤛

Accurate title - made it today and it truly is the best! I originally had my eye set on an easier recipe but went with this one once I saw she was mixing Italian sausage with beef. Also I used the last 3-5mins to broil instead for a more golden cheese crust.
This comment is for anyone who is maybe making this for the first time! I myself have never made lasagna before! Writing out all the steps down on paper first will save a lot of time later! Having everything set aside and ready to go like the measurements of ingredients pepper parsley oregano salt nutmeg all that! Then it's just ready to pour in when you are. Also let the mozzarella be the last step you do so that it looks cheesy on top. And when layering don't think everything has to be perfect all the flavors mush into together anyways so just go for it! And if you can't find all the ingredients don't worry it will still come out great!

And cook your tomato paste out for at least a minute or two (can do it with the onions at the end). You always need to cook out tomato paste to remove that tiny-ness.

Do you realize if you cut the lids off both sides of a can of tomato paste, discard one lid, then use the second lid to push the paste out. No muss no fuss.

I've now made this, following your recipe, about four times and it has been a hit every single time. Despite the hearty nature and large portion, there has never been a time when I've had leftovers. Terrific video and your step by step instructions are perfect. Thank you for this great recipe.
I made this recipe but I made way to much sauce , I made three lasagnas one I froze the lasagna after I made it , one month later I needed to be served , well let me tell you it was so tasty very fresh. The meat sauce I had a lot left over again I froze in containers . I have used that sauce it taste so yummy . Thank Stay at Home Chef for this amazing and delicious recipe.
Made it today. It's NOT one of the best. IT IS THE BEST TO DATE. Exactly, well almost. Forgot the sliced mozzarella but did replace it with shredded. Still came out great. Thank you. Already copied the recipe for when travelling, in csde I get the urge.

Update: I made this and the family LOVED it. My only change is with the draining of the meat. She doesn't tell you to drain the meat before adding the tomato-based ingredients etc. I recommend you do or you'll end up with any overly fluidlike sauce. I had added all the ingredients and had to end up using a collander to drain it. I had a bowl of loose sauce left, which i scooped two spoonfuls back into the meatier concoction, which matched the consistency of what she put at the bottom of the lasagna dish. THEN it was perfect. I think someone said on here the chicken broth was unnecessary and it probably was. I am not sure what the chicken broth actually does for this sauce.
The chicken broth allows the right amount of liquid expansion for the sauce to simmer for a few hours without burning, as old Italian tradition intended
This sounds awesome with fennel seeds! Mind blown with the soaking noodles tip😳!! I’ve got a little trick for the tomato paste, use a can opener on BOTH ends of the can, remove one cut lid & and push the paste out using the other lid! So much easier! Can’t wait to try this!! Thank you!
Terrific recipe. It was absolutely delicious. I substituted the sweet sausage for mild. It was my first time making a lasagna with non store bought pasta sauce. The sauce was delicious and the family loved it. I also love how the video shows step by step instructions and how you are very straight to the point with your directions in this recipe. Made this recipe! I sub the herbs with Italian dry herb pack. Skipped the chicken stock. Halved the recipe, but kept same amount of garlic and tomato sauce. Also didn’t use any nutmeg. Added oregano into my ricotta mixture because I love oregano! This a great base recipe which is super adaptable. subscribed !!!

I just made this today. The only thing I changed was to substitute five bay leaves for the chopped basil (I just didn't have basil) in making the sauce, which I (of course) removed before adding to the layers. Delicious. Perfectly seasoned. It's definitely going to be in my cooking rotation now.

20 years ago I made my first lasagna. It was simple but time consuming. I've always made it the same and it's well loved but I think I'm going to make 2 changes. The noodle idea is genius and so are the cheese SLICES!

Hey guys just a couple tips! Use oven ready lasagna noodles so you won’t have to do anything to the noodles. Also make this the day before so the flavors really can melt together. Trust me your lasagna will be a lot better.
Okay, I just tried this for the first time last night! It took a very long time and it isn't really a cheap thing to make but it came out so so good!! I very much recommend this!! A few things I would change though is adding more meat sauce so the cheese isn't so over powering. Making mozzarella and parmesan cheese the last layer so it looks all cool and yellow and cheesy on top. (i repeated the pattern and it ended with meat sauce as top coat still yummy but didn't look as cool lol) ...and lastly (i could be wrong) but I heard hot tap water has a lot of bad things in it so I just put cold water in a pot and boiled the water and poured it over the noodles.......just be careful maybe don't pile them evenly on top of each other spread as much as you can and maybe a few time flip them or move them around because mine ended up sticking together and then ripping apart when I tried to separate them. BUT VERY YUMMY!!!! HIGHLY RECOMMEND!! :)
I love this recipe. This was my first time ever making lasagna. I went almost to the T on this recipe because I’ve never cooked lasagna before and I never really liked lasagne but I cooked this for my father in law’s 87th birthday dinner and since she said it was the most amazing lasagna, I took her word for it. Everyone loved this recipe. The only thing I did differently was I used 3 lbs 80/20 ground beef because I already had it in the fridge and I needed to cook it. I also added more nutmeg. I just didn’t feel like 1/8 tsp was enough. If I add an ingredient, I want to taste that ingredient. It was not disappointing. I also added the fennel to the ricotta cheese. It was really good. I highly recommend this recipe.

I tried yours for this Lasagna and had to come back here and say this is the best tasting lasagna I have ever made or had. I say this because not one flavor stands out. It is the perfect combination of each and certainly the fennel seed ads to it even though I can not taste it (that is the way it is supposed to be)

Hello. I never thought to put fennel seeds in a sauce but it's a great idea. Fennel seeds are one of the key ingredients to make fresh and dried Italian sausages (also known as soppresata).

Recently I started reviewing lasagna recipes looking for one that could be my "go to" recipe. I saw this one and reviewed the video and I did not even look at any more recipes. I agree and am comfortable with each step and ingredient so I will try it very soon. I really liked the "noodle hack". This will really help with the dreaded boiling the noodles step, plus I don't care for the new no-boil noodles. Thank you for a good video and recipe.

The no boil noodles are great. You just have to make the sauce more watery so that it evaporares and softens the noodles
I wonder why people don't put mozzarella on the top. Isn't taking a golden brown bubbly lasagna out of the oven part of the appeal of lasagna? I put cubes of mozzarella in the ricotta and that's it for the mozzarella in the middle. I save the rest for the top.

Thank you, Chef. I finally got around to making this and I had to make some alterations. My wife is allergic to pork so I went with chorizo turkey sausage and downgraded the beef from 93% lean to 85% lean. This seemed to solve the fat content issue. Also, I used 32-36oz of low fat, small curd cottage cheese in place of the ricotta. I just added a bit more parsley and nutmeg, but the single egg was enough to do its job.
All-in-all, it was a most excellent lasagna and the kids were fighting for the leftovers later that night. Again, thank you for providing this recipe. I'm subbed now for future recipes. Keep up the great work!

I also use some cottage cheese but I go with a 4:1 mix of ricotta to cottage. It adds a bit more ‘tang’ to it. I’m curious about this hack she talked about with soaking the pasta for 30 minutes instead of boiling. Did that work?

Accurate title - made it today and it truly is the best! I originally had my eye set on an easier recipe but went with this one once I saw she was mixing Italian sausage with beef. Also I used the last 3-5mins to broil instead for a more golden cheese crust.
This comment is for anyone who is maybe making this for the first time! I myself have never made lasagna before! Writing out all the steps down on paper first will save a lot of time later! Having everything set aside and ready to go like the measurements of ingredients pepper parsley oregano salt nutmeg all that! Then it's just ready to pour in when you are. Also let the mozzarella be the last step you do so that it looks cheesy on top. And when layering don't think everything has to be perfect all the flavors mush into together anyways so just go for it! And if you can't find all the ingredients don't worry it will still come out great!

And cook your tomato paste out for at least a minute or two (can do it with the onions at the end). You always need to cook out tomato paste to remove that tiny-ness.

This is Michael's wife, and this recipe is the BOMB! Do you realize if you cut the lids off both sides of a can of tomato paste, discard one lid, then use the second lid to push the paste out. No muss no fuss.
OK but how do you keep the water in the can when you rinse out the last drop of tomato paste?

The lid you push through is a perfect fit for the can, so it pushes out all the paste. There is nothing left to rinse out.
