I always love how Guga is like, “everyone will love this side dish, and it is surprisingly easy to make” then goes on to list some crazy recipe. “First we need to harvest the hyoid bone of the warm water Portuguese Man-o-war. Then we crush that in a mortar and pestle with fresh saffron, basil, and bottled sweat from a Himalayan monk…”

Guga! Please try freeze drying the peperoni, then blending it to make peperoni dust and then use that for the steak crust! Would be super interesting to see if that would yield the best of both worlds, crunch and flavor combined.
Also, going with the above theme: steak vs peperoni dust compound butter maybe?

Sometimes I smoke chuck roast. I always trim the fat out, thin slice it and lay it on top of the roast to render and baste it. The fat strips always end up nice and crispy and smoky like bacon. It's really good.

Searing the thin steaks on a pan is also amazing. I would still have the steak done normally so we don't have to add a batter, while the chips are served on the side.

Steak chips alone sounds like a snack. Dust with a bit of SPOG (salt, pepper, garlic, onion) right out the heat. Add as crunch to a meatloaf sandwich or stand alone with a dip of choice.

Maybe you could try Dutch Balls as a side dish too, in Dutch they are called Bitterballen (bitter balls).
They are not bitter, they have a delicious crunchy breadcrumb crust and soft ragout with meat inside it.. they are called bitter balls because they acompany a "bitter" , a small alcoholic drink.
Great with a bit of mustard.. be carefull not to burn your mouth though.. the are HOT inside.

IDEA: Cook some bacon, crispy, but not burnt. Pat dry to remove the grease. Let air dry for a bit until it's brittle. Food processor to pulverize to a powder. Add a little water to make a THICC paste and dry age a steak with that. Steak dry aged in bacon paste!!!!
