These days, I find so many store bought cookies are oversweetened and the ones for diabetics leave a chemical aftertaste. I would prefer just to make a batch at home, reducing the sugar by at least one third of what's called for. The chocolate tart looks wonderful.

I can say that there is a chemistry involved with the fat content of the chocolate, the heavy cream and the butter, whose proportions will affect the texture of the set up filling. Fine Cooking Magazine online has an article on this very topic. My advice is to Google no bake chocolate ganache tart, then read the feedback of people who've actually made it. I looked on Bon Appetit's website and found complaints about a runny filling never setting up. That's a highly respected magazine with excellent recipe testing or so I thought. If possible, a test tart would be a good idea so you can tweak the recipe first. If not, find the recipe you feel most comfortable with and take your time putting it together. I wish the best of luck to you !
