I know I don't look it 😂 but this also marks another year since I thought I was done with My Modular Journey - at least the newbie steps - how wrong I was. This episode started out fine but grew more and more tense the less I could make things work... and in the end, coupled with burnout, the frustration consumed me and I wandered off to do other things. I hope to get back to this adventure now, and really want to assure viewers of this video this is not a Doepfer problem - it's a Me problem. And, I'm over it. Let's move on.
I too went down the rabbit hole of these Doepfer theremin modules. Cables, modules, nearby objects, desk material etc all affect the capacitance they measure. However the scaling applied is also not linear.... as in 12" per over will then turn to 4" per octave to 1" per octave etc. Which makes real voltage control over pitch impossible. I ordered an Open Theremin v4 and was much more happy. Like 20x more happy. But it still has to be get away from my actual rack. I feel your frustration though, and these modules while usable for very broad things or sound effects can be interesting, did not fulfill what I was looking for. The Open Theremin though? Great fun, with CV out etc, setup on a tripod 90° from my rack, can still be "integrated" into a setup, will never be integral to it I feel like.

Maybe not a great workflow for production (for me), but it brought me joy of not worrying about tracking things, not worrying about recording a finished project etc, just dick'n around essentially. And it was FUN. When modules are infuriating, it ruins everything im trying to do. So don't let wrong modules lol your joy :)
I have two of these modules. I never bothered to plug them into the oscilloscope, but instead just plugged CV output into a filter input or various Plaits modulation inputs. My partner was even having fun with changing the sound with moving her hands. (Normally she stays away from my modular cable monster). I just plugged the CV output into the Mordax Data. It seems I get a smooth voltage change response between -10 en +10 volt with the knob (which is different from your module), but it is within a relatively small angle on the pot meter (i.e. between 4 and 5, different values if antenna is in a different position in relation to the rack). It can't hurt to contact Doepfer and see what they say.
It is probably worth mentioning that when I used "the left Theremin" for stuff like VCF or VCA, things were a lot smoother. But "pitches", trying to sing the Star Trek: Original Series theme song wasn't working out for me :D
