Phyllis Stokes' Old Fashion Fudge (nice try, Steve...)

  • Gave it my best shot but this one came up short. Ultimately I didn't stir the fudge enough after the cooldown and this ended up chewy. Better luck next time!
    Ingredients:
    3 cups sugar
    1/3 cup cocoa
    1/8 teaspoon salt
    1 1/2 cups buttermilk
    1 teaspoon vanilla extract
    1/2 stick of butter (1/4 cup)
    1-2 cups walnuts
    Directions (follow them, don't be like Steve)
    1. In a tall saucepan, combine sugar, cocoa, salt, and buttermilk and bring to a boil over medium heat, stirring constantly
    2. Boil until mixture is approximately 240F (using a candy thermometer) or when the mixture balls up when dipped into a cold cup of water.
    3. Set the saucepan in a water bath to cool and add the butter. DO NOT STIR! Leave it in there until the temperature is reduced to about 110F (approximately 10 minutes).
    4. Add vanilla extract and begin stirring. Stir until butter incorporated, then add the walnuts. YOU MUST KEEP STIRRING UNTIL THE FUDGE IS NO LONGER "SHINY". This may take 15-20 minutes. Don't skimp on this or your fudge will end up chewy....just like Steve's.
    5. Turn out into a pan lined with wax paper and place in refrigerator to cool for 2-3 hours.
    6. Fudge should cut neatly into squares

    My wife conned me into making this recipe one time. Grandma's recipe is always best right ? I really enjoyed the experience. I was especially delighted 6 weeks after rotator cuff surgery when I had full use of my right arm again. Marshmallow cream recipe. !!! It's gooood !

    Throw it in the freezer. It'll be great, or Microwave it for an ice cream topping. Try a wooden spoon next time.

    Kids use to come to house and wanted me to ask my mom to make some fudge. I make it like she did... I add butter while it is still on the stove and then when I cut the heat off I added a about half a cup of p-nut butter. I have never used the water bath method. It's perfect every time.

    If it's important for you to have actual fudge, you can put it back in the pan and recook it. I believe you add some additional milk to it at that time, and I wouldn't be surprised if there is a video on repairing fudge online that would say how much. I'm pretty sure you didn't cook it long enough to get it to the soft ball stage. It really does have to come together and easily form a ball that still has a little give to it. So then, when the mixture cools down to where you can hold the pan on your hand without burning your hand but still nice and warm, you can start stirring with a fairly large and strong spoon or spatula (wooden is good) just till it loses its gloss. It should not take long at all. People who are stirring for 20 minutes have not cooked the mixture long enough in the first place or let it cool down enough. Like you said, this can be tricky and I can believe humidity can be a factor as well. My problem is usually that it sets up so fast I hardly have time to get it poured before it turns hard. And then I would end up with a lot of fudge in the pan because it set up before I could scrape it all out, hahaha.Those times I might have cooked it in the pan a little too long. I quit making this recipe years ago because of my arthritis and sugar flaring it up; but the original recipe used to be on the can of cocoa, and this was what my mom taught me to make. The original never called for buttermilk, but I would be curious to know if there would be a noticeable taste difference. Just so people know it makes just fine with regular milk, or maybe even with almond milk if that's what you have.
    You can also add about 1/4 to 1/3 C peanut or almond butter when you take it off the stove and add the butter and vanilla if you want that variety.
    All I meant to say was I think you didn't cook it long enough, and instead I wrote a book. 🙄 Just sharing a few ideas hoping to help.
    Really enjoy the additional entertainment factor in your videos, too. Look forward to the next one.

    I make this and bring to 230 degrees, stir with wooden spoon. If don't set up just spread and put in fridge until cold. It will be fine.

    My Mom and Grandma makes the same kind of fudge they always say you can't do it on a humid or rainy day it does not come out right but boy it sure does taste good

    Those big families had lots of little hands willing to stir old fashioned homemade fudge over the holiday break from school. There was always a pay off of a spoon,.bowl, or pan to lick clean.

    I remember your mom making that fudge. It's pretty tricky to make. Beware of sugar crystals, that will cause it to be grainy. Good try!

    I've tried making my mothers recipe at least 4 different times and it never has turned out right. It was in a 1950's or '60's recipe book. The recipe was called "5 minute fudge for the girls". It called for evaporated milk and 16 marshmallows, cocoa and sugar but I don't recall what else. Hers was a slick as glass when it set and it always set for her. Mine never did. 😔

    I can’t stand that long at a time consistently stirring. I’d try using a mixer to stir it til it lost its shine. My mama use to make a similar fudge but I don’t think it used buttermilk, just whole milk. I do know sometimes it was perfect and sometimes it didn’t set up right and ended up going on a cake for frosting. Humidity can also have an effect on how it sets up. I’d just roll it in a ball and then roll it in a little of the cocoa powder or powdered sugar.

    Mine never took very long while stirring for the shine to go away, maybe 3- 5 minutes. So long ago I can't remember.

    Always use a wooden spoon with the fudge, and skip the water bath, it will come out just fine.... Made that really hard for yourself Mr Steve.... And never put it in the fridge, and I use whole milk....

    Hey Steve. Don't feel bad. A couple of weeks ago, my sister tried your mom's fudge recipe and got the exact same result you did. We figured out that the problem stage is the water bath. Either omit it entirely and just let the fudge cool slowly in the pan, or maybe cut the time the pan sits in the water down to 10 minutes so it doesn't get too cool too fast. By the time my sister started to stir in the butter and vanilla, the fudge was already seizing up. The result was the same as yours- chewy. It had the consistency of a tootsie roll. It kind of tasted like one too. I don't know how your mom let hers sit in the sink for a full 20 minutes and it came out right. Maybe it has to do with the weather where she lived.

    I used to make this many years ago when I was raising my kids. I think you could have slightly turned up your heat. I hope that spatula was silicone and not plastic?
    I never put mine in a water bath, this is the first time I ever heard of doing it.
    Otherwise this is just what I would make and it was delicious. I don't care for fudge without walnuts.
    They keep well in a canaster in the pantry too.
    You're making me want to cook but I don't have the strength I once had.

    I thought it was milk and lemon juice or vinegar to make buttermilk, but I'm not sure. All recipes don't come out winners, I know I have had some failures even with things I made before. You just made chocolate taffy . Enjoy it, just be careful if you have any fillings. lol Stay well and safe.

    Make some pretzel turtles with it. It'd be more like that than fudge! No mistakes - just made a new candy recipe. Now you have to come up with a name - instead of pretzel turtles, it's just a little different - maybe pretzel tortoises.😜

    I think you may have cooled it just a bit too long making it hard to stir to the 20 minute mark. Oh well, if someone says that they made their very first old fashioned fudge correctly the first time it may be a fib lol! Next time you try it will be perfect. God bless, Shirley.

    Well, I think some great candies came from mistakes. Tootsie rolls, butterfingers. Who knows what else. I would not throw anything away unless it was burned or couldn’t be made edible or palatable. Try, and learn.

      That’s actually a hack…real buttermilk is made from heavy cream and the process of whipping it into butter…what’s left over is the buttermilk and whey. However that is the hack I use when I don’t have real buttermilk. Lemon juice works too.

    Don't feel bad! At least yours was edible, the first time I tried to make it (1970s) I boiled it too long and when it cooled, I broke the tip of a steak knife trying to get it out of the dish. I had to soak the dish for 3 days and dissolve it!!!!🤣🤣🤣🤣🤣

    I just love the spirit you have that even if it is a fail, that is alright. We are just glad you tried and still have your humor. Hey, we are all human and we have all been there. I made a cake one time for my grandpa and it looked terrible! But he said that the ugly ones taste better! I think any fudge attempt is worth while. And you can always put it on ice cream.     Your mom said never use the same spoon to stir with. So every time you take the utensil out, get a clean one. I did what she said, and it worked. LOL, I tried three times, before I caught that tip, in her video. When I followed her advice, it worked beautifully...

    Another way or making your own buttermilk is to msasure 1 cup of milk and add 1 tablespoon of lemon juice or vinegar, mix with a spoon and let rest for about 10 minutes.
