    Brown eggs don't mean they're organic. What makes organic is how the chickens are fed and are free range not locked up together.

      There are also videos of egg plants running white eggs thru a clay mixture to stain them this color. Eggs in a carton should be different shades of brown, not uniform in color.

    Let's do a small little twist. Make your cornbread from scratch!
    1 cup of cornmeal
    3/4 cup of flour
    1/2 tps of salt
    5 tps of baking powder
    Either honey or brown sugar
    Then do everything the way Justine did minus the Jiffy mix
    Bake at 400 degrees 25 minutes
    It is amazing

      I like Jiffy...but I would cook the bacon some first and make it all in a cast iron skillet with cheddar cheese.

    Another great use for jiffy cornbread mix is to mix it as usual but thin it with milk to "crepe" consistency and pour pancakes with it, they are a "southern civil war" thing commonly called "johnny cakes" (johnny reb...el)
    with ham or pork chops for dinner ther are a wonderful bread alternative. cook as you would a breakfast pancake.

    I have lined the bottom of a cast iron skillet with bacon and poured the cornbread batter over it. So good! The cast iron gives it a nice crust.

      My dad was from the south and I never saw him put any sort of sweetener in his cornbread yet it always had a sweetness to it. We also ground our own cornmeal so maybe that had something to do with it.

    Different types of chicken lay different types of eggs. Brown tends to be richer, more flavorful eggs. It doesn't mean organic. 😊 I'm no expert, just a counrty girl. It looks delicious.

      What?? Uhhhh, no. Yes, different breeds lay different colored eggs (including some truly beautiful shades of green, blue, etc), but the *only thing* that would affect taste is the diet of the bird it came from. The healthier the diet, the better the egg tastes. You'll notice really good eggs will have almost an orange yolk. This is 100% due to the health/diet of the chicken, not the breed or color of egg.

      Have you heard that ducks and geese also have eggs. Ducks eggs are very easy to obtain in metropolitan areas and offer a completely different flavor base for many egg dishes.

      @katie7748 A bright yellow/gold yolk can also mean that the chicken or duck or goose was fed yellow flower petals, usually marigolds​

    I raise my chickens. Roughly 80% of my eggs are brown. What makes eggs brown is the breed of chicken they come from and does not necessarily mean they are organic

    Never seen it done like this...looks wonderful! I think I might try it without the honey though. Not partial to any added sweetness in my cornbread, but that's just personal preference. Love how it looks with that bacon, too!

    Eggs with a Brown Shell are nutritionally the same as White Shelled Eggs. They are Brown because they come from a chicken that had brown feathers.

      You "farmers" are killing me!
      Any regular chicken can lay brown eggs......they are "better" if they are farm fresh,
      store bought eggs (white and brown) are never fertilized.
      On the farm, you may find the beginning of an embryo if you don't pick them from the hens daily and when they "free range" the food they eat also contributes to the flavor of the eggs. Yolks with stronger flavor will be more "orange than yellow ......generally.

    Leghorn chickens lay white eggs, while Orpington chickens lay brown eggs. The nutrition is the same.

    My BF raises chickens & told me there is little difference between white eggs & brown eggs. Usually white feathered hens produce white eggs & brown feathered hens produce brown eggs. They are equal in nutrition unless their feed mixture is enhanced & organic. We eat organic & farm fresh 97% of the time. We are going to try this yummy recipe!😊🎉❤

    Growing up we had the regular white chicken's and Banti chicken's. The brown eggs are from Banti chicken's. To me they taste the same just different color shell. I heard duck egg's are good to bake with. But I will pass on that.

      Same here, very allergic to honey. I often substitute with agave syrup. I’m sure maple would be fine, just not as thick of a liquid. Cornbread is super easy to make from scratch too. Minimal ingredients that you have more control over = healthier & less likely to react from processed food, cross-contamination. If you have concerns from other potential food allergies. I would also pre-cook the bacon a little, to get most of the artery-clogging grease out of it. Add in a bit of healthier, neutral tasting oil instead, like avocado. 😉 I also find that a lot of bacon is cured with honey, so please be careful.

    Delish. And don’t worry about these naysayers starting stuff over a couple eggs! 🙄🙄🙄
    Next time try this:
    Sautee some minced onion with that can of corn. Add a tiny bit of water once softened and a tight fitting lid. In 2 minutes the mix will be ready to add to the batter and hoo boy it wakes up those taste buds with the onion, jalapeño & corn…gives it a whole other layer of flavor. People won’t care about the meat just gimme some more of that cornbread!! Happy Cooking oh and Paula Deen wasn’t the first to say Put a lil south in your mouth! My beloved mother said that all the time and she held a masters degree in history but in true Mississippi belle fashion she steadfastly refused to pump her own gas!!😊

      Jiffy makes it cornbread but you can use corn to make it taste more like corn and give it sweetness. I make mine from scratch with cornmeal and flour and sometimes add corn.

    Love your cornbread recipe. Thought you should know that the color of a chicken egg has nothing to do with organic or non organic. It has to do more with the chicken who laid it. Chicken eggs come in white, pink, brown, blue and green. Keep cooking!

    Real cornbread is made without sugar, the sugar is a northern thing. That Jiffy Mix does not say cornbread it says corn muffins that have sugar. I like my cornbread to be cornbread not corn muffins.

      Egg color has nothing to do with richness. It has to do with the variety of the chicken. Personally I love organic and free range like Vital Farms. Their birds are fed on bugs like they should be so the yolks are super orange. I bake professionally and those are the eggs I use.

    Sweet corn, jiffy mix,and honey. The jiffy alone is too sweet for me. The bacon on the bottom definitely turned out better than I thought. Might try this with my regular cornbread recipe and leave out the honey

      Yeah Jiffy is pretty as is. Maybe the salt from the bacon, heat from the peppers and slight sourness of the cream cheese balance the honey?

    Awesomeness Justine🤩! Nice twist with the bacon wrap and cream cheese instead of sour cream. I bet it gives this a moister and richer taste too👍. I like peppers in mine but need a milder jalapeño flavor😊
