Mantra Thakali is quite overrated. The food quality doesn't justify the high price. The dishes were a bit salty during our visit, and paying 700 for that Thakali meal seems unreasonable. Jimbu Thakali is way better in regards of taste and price.
IMO, Jhamsikhel area ma VFM thakali restaurant is Thakkhola.

To answer the first question why Thakali food works better in the larger context, perhaps one needs to visit a Thakali home of a Thakali friend on a local level and also understand Thakali culture and their deep culinary association to food at home. The depth to which food and culinary culture is discussed at a Thakali household, the grain quality of rice, the texture and color of the daal or chicken, the color of the mula ko achar or the pumpkin stew is an everyday occurrence. Not that the food is eaten everyday but the attention to detail on quality of food served is very meticulous, so perhaps we are seeing that manifested on a commercial scale. The cultural standard of serving high quality food (same dal bhat) with meticulous attention offers the so called price parity, of course agreed that the prices need to be made more affordable for the everyday eater. In Nepal largely before Kathmandu valley alone, Thakali khana became famous also because of the cleanliness standards that Thakali households kept, which transencded towards Thakali restaurants or food servings all over the country where we wanted clean kitchens and bathrooms and serving areas. The Thakali community offering fresh food that came off a clean kitchen and food knowledge and hospitality stemmed deep rooted from cultural ties close to serving locally grown food in the villages is what you're seeing on a commercial scale being successful today. So the reason behind the success (I'm not an economist to judge the price) maybe owed to those inherent values more than just assuming it's simply daal bhat, which of course it is, but simple products offered with better quality at a higher price, which the market is paying for those willing to. Lastly, Thakali food shot to fame also because the Thakali's have been known to be a small ethnic minority (under 20,000 in Nepal) but part of trading and business communities so the inherent nature of their trade and practices has always been to enter into commerce, with almost all Thakali restaurants run mostly by Thakali women (highly matriarchal community). The most popular Thakali restaurants in Nepal have guaranteed ethnically Thakali men and particularly Thakali women observing the quality assurance of the food on a day to day basis. I honestly don't think the initial statement why not Bahun/Chettri or Newar Dal Bhat is that famous or popular, its just Dal Bhat is as simplified as said. Each communities strengths and weaknesses in their trades and practices is reflected from the home, the Thakali's have been in the hospitality business particularly food serving for hundreds of years in Mustang, then Pokhara, Butwal, Bhairawa and perhaps now Kathmandu. Perhaps an understudy to visit a Thakali home would reflect why the success of the Thakali food phenomena is so big would be a better place to begin with, and will be better cross cultural learning. I'm trying to provide a very rational perspective with respect to the reason why it may have been successful. I agree prices could be better for the average person but if you're visiting premium locations in Baluwatar/Maharjgung, Jhamsikhel or Durbar Marg, you are targeting a niche market who is willing to pay extra for a wholesome eating experience than just eat and rush.
A Thakali restaurant trying to recreate Taas khana won't work, similarly a Bahun person trying to recreate Newari Samay Baji might fail horribly. Have the original Alu from Mustang to know why it became a phenomena before just assuming its just aloo. Food, culture and commerce and art are deep seated in our inheritance so we just don't become good at something by a chance occurrence, perhaps the understudy is a bit missing here and offers greater learning than just a simplified price parity based service. You are not going to get cultural hospitality just because you started a restaurant, the culture needs to stem from home.
These guys seem like they are trying to promote their own restaurant by pulling other down if not they would have went to a mid ranged bhat khane thau aswell. Opportunist fellas getting slick but smart move nonetheless.

There is some reason some fancy restaurants costs more than local restaurants and it’s fair. Local restaurants they don’t add labour cost, and rent is different in every places and depend on how big is restaurant they need to hire a staffs and their ambience and etc etc that’s why their cost is higher than local ones, but nothing can beat the TASTE of local restaurants food.

In all seriousness, without any NGO or charity help and to offer thali which is a Nepalese staple for that price is a great social work, it’s a contribution to society because I believe it barely covers the cost of the food.

one of the biggest complains i have about nepal ko thali business disregarding the price, is them slowly catering to tourist and slowly making spicy items obsolete. Ja pani gayo achar dhari sab blunt nai huncha. and they way they have destroyed gundruk is sad as f especially in pokhara's nam chaleko places. Khai kasto lagna thalisakyo mero opinion ma chai viral and premium places are loosing their touch of Nepali taste every given day. It might still be okay with tourist and rich kids but masses might differ away from "thakalis" in the near future.
The blunt food is what I call the "bihe-fication" of food. Bihe ko khana jasto, inoffensive and flat.

Regards a respect for an affordable main meal to have for a normal nepali,I would next recommend "Manoj staff hotel" at kalanki,dhungedhara.i have been there for almost 9 yrs.i am abroad now and I will surely visit there for the real dal,Bhat,tarkari,(specially they are mutton enthusiast)
Mutton on mantra was taste like a indian taste not like typical nepali taste. Overall the Ambience serve was top notch and bonus its a celebrity hub so you can meet some star over there on regular basis

The big problem nowadays is show off as far as I am concerned. Mitho khana ta maile ni sasto pauni thau tirai dherai khako chu.. Some of the thakali are really overrated inside valley. I know people who visited testo ma doesnt like the food much they go there just to show off, take pictures and show it to others. As Sisan bro mentioned, It is expensive because of overhead but I think Quality food is what people want noawadys rather than you ambience and goodwill.

We pay for brand, all the labour cost, safety and hygiene. As mentioned there are hundreds of local vendors who has thakali set or rice set with reasonable price and still affordable. Why would someone look for mantra thakali instead of going to their local restaurant. We go to specific shops, restaurants, brands for their quality. Quality comes from longevity of their products. Sharing my thoughts as I work in F&B industry. Trust me I am not even thakali and I do not own any restaurants and I do not go to restaurants to eat Dal Bhaat which I can eat at my home (more tasty)😅😅😅
I totally agree with your point. I go to those expensive places only for the hygiene. If local's would be more hygiene conscious then those expensive restaurant wouldn't be my priority at all. I would only go there once in awhile to experience the ambience. But unfortunately, local's are too unhygienic and I have to go for the expensive restaurant just for the hygiene factor.
