    INGREDIENTS LIST (Serves 4)
    Beef Massaman Curry
    1 KG Diced Beef
    400G Red Sliced Onion
    6 Tbsp oil
    2 Tins Coconut milk (2 x 400g)
    1 Tbsp sugar
    2 Tsp Salt
    600g New potatoes (I halved each potato)
    Curry Paste to BLEND
    80g 15 cloves of Garlic
    250g chopped onion
    30g Fresh Ginger
    30g Turmeric Root ( Or 1 Tsp Powder
    30g Galangal Paste pr Root
    2 Stalks Lemon Grass
    1 Tbsp Tamarind Sauce ( I used Maggi Brand)
    1 Tbsp Fish sauce
    100g Mild Red chilli
    6 Tbsp veg oil
    Spices For Curry
    5 Bay leaves
    8 Kaffir Lime leaves
    8 Cloves
    1 Cinnamon stick
    4 Green Cardamoms
    3 Star Anise
    2 Tsp Coriander powder
    2 Tsp Cumin
    2 Tsp Turmeric Powder
    2 Tsp White Pepper
    1 Tsp Cinnamon powder
    100g solid coconut block
    Garnish
    Fresh Coriander
    Red Chilli Strips

    Great demo as usual ! haven't made a Massaman for years. This is authentic, only slight ingredient difference being the use of palm sugar, a cup of beef broth and toasted peanuts (subject to allergies of course). Beef Rendang next please !🌶♨🍚

      Usually, these aromatics go in at the beginning with the onions.

    I was taught to make both Thai and Indonesian food by actual restaurant owners. Restaurants all just use Mesri brand (yellow can) curry paste. The Penang I make soupy and for winter. The yellow curry is one to make also because it uses Indian curry powder along with the Mesri brand curry paste. The two in Indonesian to look at making is Opor Ayam, and Beef Rendang. Put those two together with sate chicken (with the peanut sauce), gado gado salas and rice on the same plate and you will have everyone loving you to pieces. Also, "Squid" brand fish sauce!

    Hey Al, firstly a suggestion….. Lamb Pasanda ….. on the bone lamb would be even better.
    Secondly …. And this may be sacrilege….. I cannot stand the flavour of coriander leaves, and they give me horrific indigestion. Are there any reasonable substitutes? I was thinking maybe flat leaf parsley, or would that ruin the taste of the curry too much?

    Great video as always. Didn’t know if I heard correctly when you were sweating like something. I’ve said worse. Love your Indian curry recipes but I’m a fan of great curry which also includes Thai and Malaysian as well as Chinese hope to see more thanks much appreciated

    Made this, was dubious about the beef being tender enough. Glad to say I was wrong. Absolutely beaut. Serves more than 4, you could feed 6 people with this easily

    Doing this now. It's on the hob for an hou Al. I've chucked in the Bay leaves with the kaffir Lime leaves as you didn't mention. Crying like a rapist, v funny 😂

    Add the remaining ingredients missing in the video plus 1/4 tsp ground nutmeg. If you like peanuts, add a small handful (roasted and salted) at the end. It won't compromise the authenticity. If you prefer chicken cook the sauce without meat and add it with the potatoes. For a child-friendly version use half the amount of chilies. This dish is absolutely mindblowing! Thanks, Al!

      I had a version of this a couple of weeks ago and it had green beans in. Worked really well, they added just a tiny amount of bitterness when you ate them which went very well with the general sweetness of the dish. But either way, it's one of my favourite meals.

    Is the first hours cooking time purely to tenderise the beef? If i am using chicken and that goes in with the potatoes to cook for 20 mins at the end, do i still need to leave an hour with the lid on once the coconut milk goes in?

    Had this last night, very nice and loads of flavour. I would leave out the 100g of coconut block next time as i thought it was a little too fatty.

    I've just made this curry just as Al suggested. It's certainly not an Indian curry, but very nice all the same with the Star Anise and Cinnamon flavours coming through.
    A few things that may help others.... I used Jersey Royal Potatoes from Tesco. The whole packet is 450g and I think that's about right for this.
    When I made the paste, I used a Nutribullet, but found I couldn't get all the ingredients into the jug. So I found the best thing to do here was to put enough stuff in to allow you to screw the top on easily. Give it a blast for a few seconds and then stop, open it up, and you should be able to get the rest of the ingredients in and contine to finish the paste easily.
    Now when you are trying to scrape the past out of the jug, it's difficult to get the last juicy bits out..... So put a bit of water into it, screw the top back on and shake it up. Now you will be able to get all of it out easily and the water will boil off in the cook.
    Now ... When I had finished and taste tested I added as follows......
    2 x Tbsp of Palm Sugar
    2 x Tbsp of Coconut Milk Powder
    and the Juice of one Lime.
    For the Beef, I went to Aldi and bought a 1 kilo Roasting joint and diced it up.
    The Roasting joint is better quality meat than diced beef, and works out cheaper overall.
    I hope this may help some people.

      Imrans kitchen dropped a lamb's brain curry last week or so. Not for me but vindaloo is said to be traditionally made with pork.

    Al. Just made this. Absolutely brill. 3rd attempt at Massaman. 2 previous followed other recipes. No good. This was perfect. I see some negative comments on here about result. Not sure why, I followed to to the letter and the result was great. Indeed smashing food on a Saturday night. And the Cury wa as good as a famous Restaurant In Bangkok, called " Cabbages and Condoms". That was the last time I had this . Put 2 cups of coffee in your tip jar. Appreciate the time and effort to make these videos, and to enlighten your followers with great grub! cheers!

    Missed the 'add cinnamon, bay leaves, cinnamon stick, green cardomom' - so just bunged them in after the beef and hoped for the best. Worked out ok, although it rather coconut heavy. ( still mopped up the bowl though 😅 )

    Great Vid Al..I Love a Massaman curry. but i like is hot so I use Scotch bonnet chilli and also a dollop of peanut butter makes it nice a rich Yum Yum..! Keep up the good work Al

    To take this great curry to the next step. Turn off heat before adding the potato.
    Cool and put in fridge for 24 - 48 hours.
    Put on hob, bring to simmer, add spuds to soften just like Al.

    I was watching this with subtitles only because we wanted to get the young grandson to sleep. So as the translations are often bad (it puts fink instead of THink for example ;) I wondered what you'd actually said for "sweating like a rapist" so I replayed it, with sound.

    FYI Al looks like he is using best braising steak, this can be top rump or topside, ordinary braising steak like you see in Morrisons is very fatty. I may be wrong though.

    Al can you do some side dishes? Also try turnip curry side. Its stunning and the turnip really suits the flavours of the spices including turmeric. I sometimes add steamed turnip chunks to nice earthy currys. Thanks for all your videos. Have learnt a lot over the years 👍

    What I have seen in authentic Thai restaurant is they gad two type of potato, one cut out with a cookie cutter design as a slice. Might be a family tradition but the different tectures added to the experience.

      Yep, massaman means (or at least is derived from a word meaning) muslim. From the wikipedia article:
      > The name massaman is a corruption of the term mosalman (Persian: مسلمان), an archaic word derived from Persian, meaning "Muslim"

    I love Massaman curry, also like Rendang which i think is quite similar?

      Not really. Rendang the spices are different and the oil has to come out of the coconut and cook to nutty brown. Consistency wise quite a bit different. What makes Massomzn different is the lovey clash of Indian spices with things like star anise and lime leaves with a bit of sweet you expect in South East Asia food. Also the potato and the cut of meat.
